A beautifully ganached cake is not just about pouring chocolate over a cake and hoping for the best. The secret is in the preparation, temperature, consistency, and technique.

Whether you are preparing a cake for fondant covering, a wedding cake, or a sharp-edged celebration cake, these principles will help you achieve that smooth, firm and professional finish.

1. Start With a Properly Chilled Cake

Never rush your ganache work. Make sure your cake layers are properly filled, stacked and chilled before applying ganache. A cold, stable cake makes it much easier to achieve straight sides and sharp edges.

2. Get Your Ganache Ratio Right

Your chocolate-to-cream ratio determines how firm your ganache will become.

For a firm ganache suitable for covering cakes, use a ratio appropriate for the type of chocolate you are working with. Dark chocolate generally requires less cream than milk or white chocolate.

The goal is a ganache that becomes firm enough to hold the structure of your cake without becoming impossible to spread.

3. Melt, Don't Burn

Heat your cream gently and avoid boiling it aggressively. Pour the hot cream over finely chopped chocolate and allow it to sit for a few minutes before stirring.

Stir slowly from the centre outward until the mixture becomes completely smooth and glossy.

4. Allow It to Thicken

One of the biggest mistakes bakers make is using ganache while it is still too warm and runny.

Allow your ganache to cool and thicken to a peanut-butter-like consistency before applying it to the cake. If it is too soft, you will struggle to create sharp edges.

7. Don't Keep Touching the Ganache

Once your ganache begins setting, excessive manipulation can create rough patches, air pockets and uneven surfaces.

Work confidently and allow the ganache to do its job.

8. Pay Attention to the Top Edge

For sharp edges, make sure there is slightly more ganache around the top edge than you need. Scrape it inward toward the centre of the cake.

This technique helps create that clean, professional sharp-edged finish.

9. Chill Between Stages

Patience is one of the biggest secrets of a perfect ganached cake.

If the ganache becomes too soft while working, place the cake in the refrigerator for a short period and allow it to firm up before continuing.

10. Perfect Ganache Requires Practice

Your first ganached cake may not have perfectly sharp edges—and that is okay.

Every cake teaches you something about temperature, consistency, pressure and technique. Keep practising, keep correcting your mistakes and eventually your hands will know exactly what to do.

🍫 Chocolate Cupcakes with Green & Cream Frosting

Ingredients — Chocolate Cupcakes

Makes about 12–14 cupcakes

150 g all-purpose flour

30 g unsweetened cocoa powder

150 g granulated sugar

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

2 large eggs

100 ml vegetable oil

120 ml buttermilk or evaporated milk

1 tsp vanilla extract

100 ml hot water or hot coffee

Method

1. Preheat oven to 170°C and line a cupcake tray.

2. Sift flour, cocoa powder, baking powder, baking soda and salt into a bowl.

3. In another bowl, whisk eggs, sugar, oil, milk and vanilla until well combined.

4. Add the dry ingredients and mix gently until just combined.

5. Add the hot water/coffee gradually. The batter will be fairly loose—that's fine.

6. Fill cupcake liners about ⅔ full.

7. Bake for 18–22 minutes, or until a skewer inserted into the centre comes out clean.

8. Cool completely before frosting.

🍦 Cream Frosting

250 g unsalted butter, softened

500 g icing sugar, sifted

2 tsp vanilla extract

2–4 tbsp whipping cream or evaporated milk

Beat butter until pale and fluffy. Gradually add icing sugar, then vanilla. Add cream little by little and beat for 5–7 minutes until light, smooth and fluffy.

💚 Green Frosting

Take about half of the finished buttercream and add green gel food colouring little by little. For an elegant look, use sage green, pistachio green or emerald green.

🎂 Decorating

Fit a piping bag with a 1M, 2D or 6B star nozzle.

Fill one piping bag with cream frosting and another with green frosting.

Pipe alternating green and cream swirls on each cooled cupcake.

Finish with white sugar pearls, sprinkles or small edible flowers if desired.

Baker's tip: For a beautiful two-tone swirl, place the green and cream buttercream side-by-side in a large piping bag fitted with your nozzle. This gives you a gorgeous green-and-cream swirl with every pipe.

🥐 Classic Palmier Recipe (Elephant Ears)

Ingredients

500 g puff pastry dough

150–200 g granulated sugar

1 tsp cinnamon (optional)

1 tsp vanilla sugar or vanilla powder (optional)

Method

1. Prepare the pastry:
Roll out the puff pastry into a rectangle, about 3–5 mm thick.

2. Add sugar:
Sprinkle sugar generously over your work surface and place the pastry on it. Sprinkle more sugar on top and gently roll it into the dough.

3. Fold the pastry:

Fold both long sides toward the center.

Fold them again toward the center.

Finally, fold one side over the other, creating a long layered roll.

4. Chill:
Wrap and refrigerate for 20–30 minutes to make slicing easier.

5. Slice:
Cut into slices about 1–1.5 cm thick.

6. Arrange:
Place the slices on a baking tray lined with parchment paper, leaving enough space between them. Sprinkle a little more sugar on top.

7. Bake:
Bake at 200°C for about 15–20 minutes until golden and caramelized. Turn the palmiers halfway through baking if needed.

8. Cool:
Allow to cool completely. They will become crisp as they cool.

For extra delicious palmiers, mix the sugar with a little cinnamon, orange zest, or vanilla before sprinkling it on the pastry.
