SHOULD PLANTAIN BE IN SMALL CHOPS PLATTER? Let’s Settle This!

We all love plantain whether it's fried, grilled, or sandwiched in a good old bole and fish combo.
But in your small chops tray? Ehn… That’s where the debate starts oh

In my opinion, plantain is delicious, but small chops is a party mood crunchy, spicy, bite-sized. Plantain feels more like Sunday rice’s bestie than the life of the party or some breakfast combo of plantain and egg with hot tea 😂. Seeing how expensive it has gotten, adding it inside the platter makes it more expensive

1. Get the necessary training you need first: Learn, unlearn,test waters before launching out.

2. Some days, no order will come in: You’ll feel discouraged but don’t quit.

3. Your first few customers might be family: They may want it free,be generous but learn to separate business from favours early on.

4. People will price your tray like tomatoes in the market: Have your price list ready and stand firm.

5. Always give quality: Let it be known about your business that you make quality product and you can be trusted.

6. Your best customer might never post you or recommend you: But someone random will and bring you 3 more clients.

7. Delivery people will stress you: Either get a trusted rider or plan for delays.

8. You’ll compare yourself to others: But trust me, consistency wins which in turn brings perfection.

9. You’ll grow faster when you track your sales & expenses: Even if it’s just in a small notebook.

10. Treat every customer fairly: Some will order in small quantities while others in large quantities, don't discriminate.

ONCE UPON A TIME,MY SMALL CHOPS WRAPS REFUSED TO COOPERATE.

Just saw this picture in my gallery and it brought back so many memories. This was when I started making small chops some years back,I struggled with making the wraps,they just refused to cooperate😂😂
I’d use dough method, brush method,I sha tried everything 😂and somehow end up with wraps that cracked, tore, or just wouldn’t fold right.
Nothing felt more frustrating than spending hours and still not getting it right.

But I didn’t stop. I kept trying,testing, and learning…
Now? My wraps are smooth, stretchy, and fry so well

The journey hasn’t been perfect but it’s been worth it.
Every smooth roll you see today started with a rough beginning.

MY PUFF PUFF WASN'T ALWAYS ROUND.

When I first started making small chops, my puff puff had a mind of its own! Is it the taste? It was tasteless and had this yeast after taste.
Instead of being round and fluffy, they came out looking like watery akara 😂 or should I say flat buns 😂

But I kept practicing , adjusting the batter, oil temperature, and even how I scooped it.
Now? My puff puff is round, golden, and fluffy inside, crisp outside, just how it should be!

So if you’re just starting out, don’t stress. Every pro was once a beginner who didn’t give up.
And if you want perfect puff puff without the stress... you know who to call.

I recently came across a trending video where a food vendor was seen serving food that wasn't closed under a heavy downpour. I stopped to wonder, won't water enter this food? Was proper planning not made?
These are things to note when going for an outdoor event during the rainy season:

1. Check the Weather Forecast: Monitor rain predictions and prepare accordingly.

2. Confirm Event Logistics: Ask organizers about backup shelters or indoor options.

3. Pack Early & Wisely: Arrange your tools, ingredients, and rain gear in advance.

4. Cover Cooking and Serving Areas: Use clear plastic or nylon sheets to protect your cooking and display space.

5. Use Warmers with Covers: Maintain temperature and prevent rain from touching the food.
