The first batch of chin chin I ever sold, I gave half of it away for free because I was scared it was not good enough.

Chin chin is supposed to crunch, not chew. That crunch is not luck. It comes from the right flour, the right oil temperature, and frying it in small batches so every piece cooks evenly.

• A knife

• A sieve or slotted spoon

That is enough to begin.
