Ingredients.
Yellow com 1 cup
Guinea com 1 cup
Wheat rice. 1 cup
Soya beans. 1 cup
Dried unripe plantain. 2 medium sizes
Dried sweet potato. 250g
Skimmed milk. 250g
Vanilla/Butterscotch 3 teaspoons
Sugar. ½cup
Butter. 50g
Groundnut (optional ) 1 cup

Method of preparation
1.Fry yellow com,wheat rice,guinea com with little butter one after the other
2. Boil the soya beans for 45 minutes, wash and dry
3. Fry the soya beans also with little butter
3. Grind the com rice, soya beans, guinea com, potatoes, plantain and sugar
4. Mix all together, add milk and flavour and mix thoroughly.
5. Prepare with hot water when you want to use it, serve as baby food breakfast or dinner with accomplishment ( fried plantains bread and Akara ball)

*BEANS & PLANTAIN PORRIDGE RECIPE*

Ingredients
• Beans
• Ripe or semi-ripe plantain
• Palm oil
• Vegetable oil
• Onion
• Tatashe
• Shombo
• Rodo
• Crayfish
• Grilled mackerel fish
• Ugu leaves
• Salt
• Seasoning cubes
Step 1: Parboil the Beans
~ Pour water into a pot and bring it to a boil.
~ Add the beans and allow to boil for about 10 minutes.
~ Drain the water and rinse the beans thoroughly.
Step 2: Cook the Beans
~ Boil a fresh pot of water.
~ Add the parboiled beans and some chopped onions.
~ Cover the pot and cook until the beans are about 70% done and slightly soft.
~ Once it reaches this stage, set the beans aside.
Step 3: Prepare the Plantains
~ Peel the plantains and cut them into your desired shapes.
~ Set aside.
Step 4: Make the Sauce
~ In a clean pot, heat up some palm oil and add a little vegetable oil.
~ Add chopped onions and sauté until fragrant.
~ Add the blended tatashe, shombo, and rodo.
~ Fry the mixture until it’s well cooked.
~ Add crayfish powder and pieces of grilled mackerel fish.
~ Season with salt and seasoning cubes.
~ Stir to combine and allow the sauce to cook properly.
Step 5: Combine Everything
~ Add a little water to the sauce to loosen it and bring it to a boil.
~ Pour in the precooked beans and the cut plantains.
~ Stir gently to combine.
~ Adjust seasoning if necessary.
~ Cover and let it cook until the plantains and beans are fully soft.
Step 6: Add the Vegetables
~ When the water is almost dried up, add chopped Ugu leaves.
~ Stir gently to combine.
~ Allow to simmer for 1 minute.
Your delicious Beans and Plantain Porridge is ready. Serve hot and enjoy!

SWEET POTATO BISCUITS INGREDIENTS
1. Flour
2. Cooked Mashed Potatoes
3. Sugar
4. Margarine
5. Milk
6. Baking Powder
7. Salt
METHOD OFPREPARATION:

1. Sieve all the dry ingredients together.
2. Melt the margarine in a sauce pan and beat well into the mashed sweet potatoes. Stir in the Milk and mix thoroughly.
3. Add the dry ingredients to the potato mixture and stir up till well blended.
4. Add a Little more milk if necessary to make a soft but not wet dough.
5. Turn to a floured board and roll out lightly 1cm thick
6. Cut with Biscuit cutter and arrange on a greased baking tray
7. Bake in a hot oven for 20 minutes

ABACHA RECIPE.

Ingredients are:
7 ½ cups of Abacha (African Salad)
2 ehu seeds (optional)
1 ½ cups Of Ugba (Ukpaka)
½ cup of crayfish (Grounded)
Seasoning cubes to taste
105ml palm oil
1 teaspoon Edible powdered potash
Yellow habanero Pepper to taste
Salt to taste
3 garden eggs (optional)
Utazi leaves (optional)
Garden egg leaves (optional)
Meat/dry fish (optional)

PROCEDURE:
1. Blend your crayfish and also dissolve your potash in half a cup of water.

2. Slice the onions, garden egg leaves and Utazi leaves. Set aside, they will be used as the topping.

3. Soak the dried Abacha in boiled water, allow three minutes and drain the water.

4. Transfer into a sieve to allow water drain further.

5. Heat the ugba in a small pot with 3 tbsp water and allow to heat for 4 minutes.

6. Filter the dissolved potash into a mortar or pot leaving out the residue.

7. Add palm oil to it and stir until it forms a thick-yellowish paste.

8. Stir properly before adding the crayfish and pepper, followed by the ground ehu.

9. Add the Ugba and seasoning cube. Stir all together and taste for salt.

10. Now you can add the abacha

11. Serve with fried meat or fish. Then the leaves and a few slices of onions.

Other healthy ingredients added in making Abacha(African Salad) includes:
Garden Eggs, Cray Fish, Onions, Fluted Pumpkins commonly known as Ugwu, Dry fish or Stock fish.

Butter Bread 🍞🥖🥐

Ingredients:
- 2 cups of warm milk 🥛
- 1/2 cup of melted unsalted butter 🧈
- 1/4 cup of granulated sugar 🍚
- 1 packet of active dry yeast 🧂
- 5 cups of all-purpose flour 🌾
- 1 teaspoon of salt 🧂
- 1 egg, beaten 🥚

PROCEDURES ARE:
1. In a mixing bowl, combine warm milk, melted butter, sugar, and yeast. Let it sit for about 5 minutes until the yeast is activated and foamy.
2. Add in the flour and salt, mix until a dough forms.
3. Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
4. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour.
5. Punch down the risen dough and divide it into desired shapes for your bread.
6. Place the shaped dough on a baking sheet, cover with a kitchen towel, and let it rise for another 30-45 minutes.
7. Preheat the oven to 375°F (190°C).
8. Brush the risen dough with beaten egg and bake for 25-30 minutes until golden brown.
9. Let the bread cool before slicing and serving.

Tips:
- Make sure your yeast is not expired for the best rise.
- Kneading the dough well is key to achieving a soft and fluffy texture.
- You can brush the baked bread with melted butter for added flavor.

BANGA STEW. ( Ofe Akwu)

INGREDIENTS
Banga palm fruit
1 Kg Assorted meat or fish
500 g Mackerel
1 sachet of ‘Onga soup’ spice
A cup of Sliced onions
2 cups of sliced fluted pumpkin optional
3 seasoning cubes
1 Ogiri okpeyi
Ehuru
1 cup of sliced Scent leaf
200 g dried fish
1/2 cup ground Crayfish
Pepper to taste
Salt to taste

INSTRUCTIONS

Start by boiling the palm fruit with just water, it should be ready to pound in 15 minutes. Pound using mortar and pestle.

Add water to the pounded Banga seeds and squeeze out the thick paste. It should be around 10 cups and thick. Set aside in a large bowl.

Season the meat and mackerel and precook using the right spices. A teaspoon of salt, two seasoning cubes, and onions.

Remove the fish after 10 minutes and cook the meat till it becomes soft.

Once the meat is cooked, add the palm fruit paste and allow it to boil.

Add the washed dried fish and crayfish to the boiling pot.

Add salt and pepper to taste, a seasoning cube and/or onga classic (half teaspoon), taste your stew. Add the remaining sliced onions and the precooked mackerel.

Cover and cook for 10 minutes before adding the chopped scent leaves.

Banga stew (Ofe Akwu) is served with rice, beans or white rice
