Today, while talking about my food business at the gym, someone asked me about my coconut rice. She was surprised when I told her I don't use coconut flavouring.

Then she sent another video of the empty plate.

Apparently, the rice didn't survive long enough for a proper review. 🥥🍚🤣

And honestly? I'll take that as a compliment. ❤️

At Cravings by Bjays-ZEST & ZING

How healthy do I want my meals to be?
Well... healthy enough to choose my air fryer when I can.

Don't get me wrong, there's nothing like good old fried chicken, but these days, if I can get that beautiful golden color, crispy skin, and juicy inside without soaking my protein in plenty of groundnut oil, why not?

One thing I'm learning is that healthy eating doesn't always mean giving up the foods you love. Sometimes, it's simply finding smarter ways to enjoy them.

And honestly, looking at this chicken and snails, I don't think it missed the oil bath one bit.

Last week, my business taught me a lesson I’ll never forget.

I had bought beautiful fresh goat meat worth almost ₦15,000 for my Ekpang. I seasoned it, prepared everything, and because there was no power supply, I couldn’t store it the way I normally would. Since I planned to use it within 24 hours, I thought it would be fine.

The next morning, I discovered my “beautiful meat” was no longer beautiful. At all.

I had orders to fulfill, no time to start looking for fresh meat, and the dispatch riders were already giving me enough stress for one day.

Thankfully, I had some chicken in stock. So I did something I never imagined I would do as an Efik woman—I paired Ekpang with chicken.

In all my years of eating Ekpang, I’ve never seen that combination. To me, it felt strange. But business has a way of pushing you to think fast, adapt, and make the best of unexpected situations.

Guess what?

Customers loved it.

Some even complimented the chicken and Ekpang combination.

That day reminded me that sometimes the things we worry about the most turn out better than we expect.

Behind every successful business is a person constantly solving problems, making quick decisions, and praying for wisdom in moments nobody sees.

Sometimes it’s not experience that saves the day.

It’s common sense, a little creativity, and God’s grace.

To every business owner out there, I see you. The improvising, the adapting, the figuring-it-out-as-you-go.

My biggest fear is someone opening my pot of ekpang and asking, Where are the periwinkles?

That's why I don't joke with them.
I add plenty before the wrapped cocoyam and wateryam go into the pot.

Because a good ekpang should be rich in palm oil, loaded with crayfish, and swimming in periwinkles.

Life is already hard. Your ekpang shouldn't have to go searching for periwinkles too. 😂

And let's be honest, that sweet, rich taste we all love comes from being generous with the ingredients. The oil, the crayfish, and of course, the periwinkles.

So if you order ekpang from Cravings by Bjays-ZEST & ZING , don't be surprised when you keep finding periwinkles from the first bite to the very last spoonful.

That's not a mistake... eyen eka, that's love. 🤣
