Banana Bread 🍌

Ingredients:

2 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter (melted)

¾ cup brown sugar

2 large eggs (beaten)

4 ripe bananas (mashed)

1 teaspoon vanilla extract

Preparation Steps:

Preheat oven to 175°C (350°F). Grease a loaf pan.

In a bowl, combine flour, baking soda, and salt.

In another bowl, whisk melted butter and brown sugar.

Add beaten eggs, mashed bananas, and vanilla. Mix well.

Fold in the dry ingredients until just combined (do not overmix).

Pour batter into the pan and bake for 50–55 minutes.

Cool before slicing.

Vanilla Butter Cake 🍰

Ingredients:

2 ½ cups all-purpose flour

1 cup unsalted butter (softened)

1 ½ cups granulated sugar

4 large eggs

1 tablespoon vanilla essence

2 teaspoons baking powder

½ teaspoon salt

¾ cup whole milk

Preparation Steps:

Preheat your oven to 180°C (350°F). Grease and flour your baking pan.

In a bowl, cream together butter and sugar until light and fluffy.

Add eggs one at a time, beating well after each addition.

Stir in vanilla essence.

In another bowl, mix flour, baking powder, and salt.

Gradually add dry ingredients to the butter mixture, alternating with milk.

Mix until smooth and lump-free.

Pour into prepared pan and bake for 35–40 minutes, or until a toothpick inserted comes out clean.

Allow to cool before serving.

Banana Bread 🍌

Good morning, food lovers! 💛
Start your Sunday with the sweet aroma of freshly baked banana bread — soft, moist, and bursting with banana goodness! Perfect with a cup of tea or chilled zobo 😋

Ingredients:

3 ripe bananas (mashed)

2 cups flour

¾ cup sugar

½ cup melted butter or vegetable oil

2 eggs

1 tsp baking soda

½ tsp salt

1 tsp vanilla essence

Optional: chopped nuts or chocolate chips

Procedure:

Preheat oven to 180°C (350°F) and grease your loaf pan.

In a bowl, mash bananas until smooth.

Add melted butter and sugar, whisk well.

Mix in the eggs and vanilla essence.

In a separate bowl, combine flour, baking soda, and salt.

Pour wet ingredients into dry and mix gently (don’t overmix).

Add nuts or chips if desired.

Pour into the loaf pan and bake for 45–50 minutes or until a toothpick comes out clean.

Cool before slicing.

Spaghetti Jollof
Tasty, colorful, and quick to prepare 🍝🔥.

Recipe:
Ingredients:

1 pack spaghetti (500g)

5 medium tomatoes (blended)

2 red bell peppers + 2 scotch bonnet (blended)

1 onion (chopped)

3 tbsp tomato paste

½ cup vegetable oil

2 seasoning cubes, salt to taste

Meat stock or water (as needed)

Method:

Break spaghetti in half, parboil 5–6 minutes, drain, and set aside.

Heat oil in a pot, fry chopped onion and tomato paste 2 mins.

Add blended tomato/pepper mix and cook until sauce thickens and oil separates.

Add meat stock/water, seasoning cubes, and salt. Stir well.

Add spaghetti, toss until coated, cover and cook on low heat until pasta absorbs sauce.

Serve hot with fried plantain or chicken.

4 oranges (juiced)

1 tbsp honey (optional)

Ice cubes

Method:

Cut oranges and squeeze out juice.

Strain to remove seeds/pulp if preferred.

Golden, fluffy, and sweet 😋🍩. Perfect as a snack or party treat

Recipe:
Ingredients:

3 cups flour

½ cup sugar

2 tsp yeast

½ tsp nutmeg

1½ cups warm water

Pinch of salt

Oil for frying

Method:

In a bowl, mix flour, sugar, yeast, nutmeg, and salt.

Gradually add warm water to form a smooth, thick batter. Cover and let rise 1 hour.

Heat oil, scoop batter with hand or spoon, drop into oil.

Fry until golden brown. Drain and serve warm.

Colorful, tasty, and filled with goodness 🥕🌽

Recipe:
Ingredients:

3 cups cooked rice (parboiled)

½ cup mixed veggies (carrots, peas, sweetcorn)

½ cup diced liver or chicken

3 tbsp vegetable oil

1 small onion (chopped)

2 cloves garlic (minced)

2 tbsp soy sauce (optional)

Salt & seasoning cubes to taste

Method:

Heat oil in a pan, sauté onion and garlic until fragrant.

Add diced liver/chicken and stir-fry 3–4 mins.

Toss in mixed veggies, stir-fry 2 mins.

Add cooked rice, soy sauce, seasoning, and salt. Stir well until rice is coated and heated through.

Serve hot with chicken, fish, or salad.

Spicy, smoky, and irresistible 🔥🍢

Recipe:
Ingredients:

500g chicken breast/thigh (cut into strips)

3 tbsp suya spice (yaji)

2 tbsp groundnut oil

1 seasoning cube, salt to taste

Onion slices & fresh tomatoes (for serving)

Method:

Mix chicken strips with oil, suya spice, seasoning cube, and salt. Marinate 1 hour.

Thread chicken on skewers.

Grill over charcoal or bake at 200°C, brushing occasionally with oil until cooked and slightly charred.

Serve hot with onions, tomatoes, or cabbage.

Jollof Rice
Nothing beats the taste of classic Nigerian Jollof Rice 🍚🔥. Rich, smoky, and delicious.

Recipe:
Ingredients:

3 cups long-grain parboiled rice

5 large tomatoes (blended)

3 red bell peppers + 2 scotch bonnet (blended)

1 large onion (blended with peppers)

½ cup vegetable oil

3 tbsp tomato paste

3 cups chicken stock

2 seasoning cubes, 1 bay leaf, salt to taste

Method:

Heat oil, fry tomato paste 2 mins, add blended tomato/pepper mix. Cook until sauce thickens and oil floats.

Add seasoning cubes, bay leaf, and chicken stock. Stir.

Pour in washed rice, stir well, reduce heat, cover with foil or parchment to trap steam.

Cook until rice is soft and smoky. Fluff and serve hot with fried plantain or chicken.

Yam Porridge
Soft, tasty, and nourishing 😋✨

Recipe:
Ingredients:

½ medium yam (peeled & cut into 2cm cubes)

½ cup palm oil

1 medium onion (chopped)

1 tbsp ground crayfish

2 tbsp blended pepper mix (tomato + scotch bonnet optional)

2 seasoning cubes, salt to taste

A handful of ugu/spinach (optional)

Water as needed

Method:

Place yam cubes and chopped onion in a pot; add water to cover and bring to boil.

When yam is about half-soft, add blended pepper, crayfish, seasoning cubes and salt. Stir.

Pour in palm oil, reduce heat and simmer until yam is fully soft and the porridge thickens (20–25 mins).

Mash a few cubes lightly for creaminess, stir in ugu/spinach, cook 2 more minutes. Serve hot.

Recipe:

2 slices whole wheat bread (toasted)

1 ripe avocado (mashed)

½ tomato (sliced)

½ cucumber (sliced)

Pinch of salt & black pepper

Mash avocado with salt and pepper.

Spread evenly on toasted bread.

Top with tomato & cucumber slices.

Serve immediately for a fresh bite.

Spaghetti Stir-Fry with Vegetables
Colorful, tasty, and satisfying 🍝

Recipe:

2 cups cooked spaghetti

1 carrot (sliced)

½ green bell pepper (sliced)

½ red bell pepper (sliced)

½ onion (sliced)

2 tbsp vegetable oil

1 tsp soy sauce (optional)

Salt & seasoning to taste

Heat oil, sauté onions and vegetables.

Add cooked spaghetti and toss well.

Season with soy sauce, salt & seasoning.

Stir-fry for 5 minutes and serve hot.
