How to prepare Nigeria Delicious CARROT STEW in a simple way
Ingredients
Carrot(quantity of your choice depending on the quantity of stew you want to prepare)
Meat/Fish(any protein of your choice)
Green pepper
Green beans/peas
Fresh pepper
Onions
(Curry powder optional,Ginger,garlic I prefer fresh ones,rosemary,black pepper,bay leaf and any other SPICE of your choice)
seasoning cubes
Salt to taste
Vegetable oil
PREPARATION
STEP 1
Wash, scrape the back of the carrot, wash again,cut into small pieces then grind
Slice the onions, pound the fresh pepper and set aside.
Wash your protein thoroughly, set aside.
Grind your fresh garlic and ginger if you are making use of it
Wash and chop the green pepper
STEP 2
Put the washed meat in an empty pot.
Add your spices and fresh garlic and ginger seasoning cube, salt and very little water, mix with a turning stick, and apply heat.
Leave the meat to cook for 7 to 10 minutes on medium heat, remove from heat.
STEP 3
In an empty dry pot, add vegetable oil, leave to heat up for 2 minutes.
Add the sliced onions, stir, add the grinded carrot and stir.
Cook the carrot till the water dries up.
Add pepper, curry powder, your protein with stock(meat/fish),stir, cover and leave to boil for 10 minutes.
Add seasoning cube and salt, little water to your thickness of choice, stir, cover and leave to simmer for another 5 minutes.
STEP 4
Finally, add the chopped green pepper, green beans/peas then stir and leave for another 2 minutes.
Remove from heat.
