🌿 Lentil Gluten-Free Fluffy Cake

🥣 Ingredients
• 1 cup red lentils (best for softness)
• 3 large eggs
• ½ cup sugar (or honey/maple syrup for natural sweetness)
• ¼ cup vegetable oil or melted butter
• ½ cup milk (or plant milk)
• 1 tsp vanilla extract
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 tsp cinnamon (optional)
• Zest of 1 lemon or orange (optional, for flavor)

👩🏽‍🍳 Instructions
1. Soak the lentils
• Rinse and soak lentils in water for 3–4 hours (or overnight).
• Drain completely.
2. Blend
• Add soaked lentils + eggs + milk + oil into a blender.
• Blend until very smooth and creamy (this is key for fluffiness).
3. Mix
• Pour into a bowl.
• Add sugar, vanilla, baking powder, baking soda, salt, and spices.
• Mix gently until combined.
4. Bake
• Preheat oven to 180°C (350°F).
• Pour batter into a greased or lined cake pan.
• Bake for 30–40 minutes or until a toothpick comes out clean.
5. Cool
• Let it cool before slicing (it firms up and gets fluffier).
