Fried Rice Recipe.

Servings for 10 people
Ingredients
5 cups of rice.
1 cup of sweet corn
2 cups of sliced Carrot 🥕
2 cups of sliced Green beans.
1 cup of peas 🫛
1 cup of sliced yellow pepper
1 cup of sliced red pepper 🫑
1 cup of sliced Green pepper.
Cow Liver (1/2Kg).
2kg of Chicken.
Vegetable oil.(250ml)
1 cup of sliced Onions.
Seasoning cubes 8
Thyme spice (1 teaspoon)
Rosemary spice (1 teaspoon)
Curry powder for coloring and spice (2 Tablespoons).
Salt to taste
Pepper to taste

Method of Preparation
1. Cook and fry your chicken
2. Cook the cow liver, dice it into smaller pieces and fry
3. Wash, cut and sliced all your vegetables
4. Parboiled your rice with a little curry until almost well cooked, rinse and keep aside
5. Stir fry all your vegetables in oil with seasoning cubes, spices, salt and pepper to taste, add sweet corn and fried liver to it
6. Then add your almost well cooked rice to your stir fried vegetables and give it a good mix
7. Taste if seasoning is okay or will need adjustment (to your taste) cover and allow to simmer for about 5 to 10 minutes.
8. Enjoy your fried Rice with Chicken

Nigerian shawarma is a popular street food in Nigeria, and it's a bit different from the traditional Middle Eastern shawarma. Here's a recipe for Nigerian shawarma:

Ingredients:

For the meat:

1. 1 pound beef or chicken, sliced into thin strips
2. 1/4 cup vegetable oil
3. 2 cloves garlic, minced
4. 1 tablespoon grated ginger
5. 1 teaspoon ground cumin
6. 1 teaspoon ground coriander
7. 1/2 teaspoon paprika
8. 1/2 teaspoon salt
9. 1/4 teaspoon black pepper
10. 1/4 teaspoon cayenne pepper (optional)

For the sauce:

1. 1/2 cup mayonnaise
2. 1/4 cup ketchup
3. 2 tablespoons chopped fresh parsley
4. 1 tablespoon chopped fresh cilantro
5. 1 tablespoon grated onion
6. 1 tablespoon lemon juice
7. Salt and pepper to taste

For the vegetables:

1. 1 large onion, sliced
2. 2 large tomatoes, sliced
3. 1 large cucumber, sliced
4. 1/4 cup chopped fresh parsley
5. 1/4 cup chopped fresh cilantro

For the pita bread:

1. 4-6 pita breads

Instructions:

1. In a large bowl, whisk together the vegetable oil, garlic, ginger, cumin, coriander, paprika, salt, black pepper, and cayenne pepper (if using).
2. Add the sliced meat to the bowl and toss to coat with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.
3. Preheat a grill or grill pan to medium-high heat. Thread the marinated meat onto skewers, if using.
4. Grill the meat for 5-7 minutes per side, or until it is cooked through and slightly charred.
5. Meanwhile, make the sauce. In a blender or food processor, combine the mayonnaise, ketchup, parsley, cilantro, onion, and lemon juice. Blend until smooth.
6. Warm the pita breads by wrapping them in foil and heating them in the oven for a few minutes.
7. Assemble the shawarma by slicing the grilled meat into thin strips and serving it in the warm pita bread with the sauce, onion, tomato, cucumber, parsley, and cilantro.

Ingredients:

- 1 pound fish (cod, tilapia, or any white fish)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- Vegetable oil for frying
- 2 tablespoons lemon juice (optional)

Instructions:

1. Prepare the fish: Cut the fish into small pieces and grind or chop finely.
2. Mix the fish with onion, garlic, ginger, soy sauce, olive oil, salt, and pepper.
3. Add flour and mix well.
