Nigerian Party Jollof Rice with assorted meat, including cow skin (kpomo).
Ingredients:
For the Rice:
Long grain parboiled rice
Vegetable oil or cooking oil
Tomato paste (tin tomato)
Fresh tomatoes
Red bell peppers (tatashe)
Scotch bonnet (ata rodo)
Onions
Garlic (optional)
Ginger (optional)
Chicken or beef stock
Bay leaves
Seasoning cubes (e.g., Maggi, Knorr)
Salt
Thyme
Curry powder
White pepper (optional)
Butter (optional for flavor)

Assorted meat (beef, cow tripe (shaki), kpomo/cow skin, goat meat, etc.)
