Here are the 4 Steps to make your swallow
Step 1: Cold Mix: Dissolve the okpa flour in a pot with room-temperature or lukewarm water. Whisk it thoroughly until it forms a completely smooth, very watery slurry. Do not add oil, salt, or pepper.
Step 2: Cook on the Stove: Place the pot over low-to-medium heat. Stir continuously with a wooden spatula or turning stick. It will quickly begin to thicken and form translucent translucent lumps; keep stirring vigorously to smooth them out.
Step 3: Adjust and Steam: Once it gathers into a thick paste, pour a little water around the edges. Cover the pot and let it steam on low heat for 5 to 10 minutes to ensure the flour cooks completely.
Step 4: Final Turn & Cool: Give it a final, vigorous stir until it is stretchy and soft. Turn off the heat and scoop it into wraps or a bowl. Let it cool completely before eating; it hardens into its perfect, swallowable texture as it cools down
