🥣 Ogbono Soup (Draw Soup) Recipe
Ingredients
1 cup ground ogbono seeds (wild mango seeds)
500 g beef (or goat meat)
1 cup stockfish and/or dry fish
2 tablespoons ground crayfish
1 cup palm oil
2–3 scotch bonnet peppers (blended or chopped)
1 small onion (optional, for meat stock)
2–3 cups meat stock (or water)
1 handful ugu (fluted pumpkin leaves) or bitterleaf (washed)
Seasoning cubes
Salt (to taste)
Instructions
1. Prepare the meat and fish
Wash your beef, stockfish, and dry fish thoroughly.
Boil the beef with onions, seasoning cubes, and salt until tender.
Add stockfish halfway through the cooking so it softens.
2. Make the ogbono mix
In a bowl, mix the ground ogbono with a little palm oil to form a smooth paste (this helps it dissolve easily and prevents lumps).
3. Cook the soup base
In a clean pot, heat the remaining palm oil slightly (don’t bleach it).
Add the ogbono paste and stir continuously on low heat.
Gradually pour in the meat stock while stirring.
The soup will start to draw (thicken and stretch).
4. Add proteins and flavor
Add the cooked meat, stockfish, and dry fish.
Add crayfish, pepper, and seasoning cubes.
Stir well and allow it to simmer for 5–7 minutes.
Add your washed ugu or bitterleaf.
Stir and cook for another 2–3 minutes.
Taste and adjust seasoning if needed.
Serve with:
Pounded yam, fufu, eba, semovita, amala or wheat.
