Before electrical refrigeration was discovered, Africans wrapped their foods in banana wraps to prevent spoilage.

The leaf had multi-purposes. It was used to cook, wrap or serve food.

The plant is rich in natural antioxidants, also found in green tea and gets absorbed into the food during cooking.

They are non-porous and add a subtle sweet aroma to your cooking.

There is a variety of food cooked with banana wraps like the Ofada rice (Nigeria), Waakye (Ghana).

But one of the most popular Nigerian delicacies prepared using the banana leaf is Moi-Moi, a meal made with bean paste and known for its spicey delicious taste.

"Na Ngeen Def" in #Wolof, a primary language spoken in Senegal means "hello".

Today, we sample Chicken Yassa. It is a #Senegalese popular sauce also known as Yassa au poulet.

A popular dish in some #African countries like Zambia, Guinea, and Ivory Coast.

The chicken is marinated in lemon and mustard for hours before it is cooked.

Ingredients:
1 whole chicken
7 onions, sliced
4 lemons or lime juice
2 tablespoons of mustard
150ml of oil
1 head of garlic
@Atarofoods Chicken Rub
Black pepper
1 tablespoon chilli powder
Salt, to taste

Recipe:

๐ŸŒฟ Mix part of the garlic, 2 lemons, mustard and black pepper. Marinate the chicken for 2 hours or overnight.

๐ŸŒฟ Slice and marinate the onions with mustard, lemons and black pepper ( like you did with the chicken).

๐ŸŒฟ Grill the chicken in the oven or fry it on the stove with 3 tablespoons of oil on high heat until golden brown.

๐ŸŒฟ Heat 3 tablespoons of oil in a cooking pot and stir-fry the onions for a few minutes. Then add in the remaining garlic.

๐ŸŒฟ Return the grilled chicken to the pot with 1 cup of water. Add @atarofoods Chicken Rub, chilli pepper and salt to your taste. Let it simmer for 30mins or until the chicken is done and the liquid in the sauce is totally absorbed

Serve with jasmine rice or couscous and enjoy! ๐Ÿ˜

No more guessing on a weekend brunch for family or friends.

Get creative with your leftover potatoes! Make a fishball snack and spice it up with our @atarofoods fish rub ๐Ÿ˜

INGREDIENTS

8 oz (225g) cooked fish - skin and bones removed
1lb (450g) leftover mashed potato
chopped fresh parsley
2 eggs
seasoned flour to coat
Oil for frying
3 cloves Garlic
1/2 Onion, medium
@atarofoods fish rub

RECIPE

Season your fish with onions, garlic, pepper, @atarofoods fish rub and cook for 5 minutes.

๐Ÿฌ Mix the fish and potato together well - stir in the parsley.

๐Ÿฌ Add the egg and mix thoroughly.

๐Ÿฌ Divide the mixture and roll into balls.

๐Ÿฌ Roll each ball in the flour and then set them aside in the fridge to chill for about 30 minutes.

๐Ÿฌ Heat your oil in a pan - enough to shallow fry - and then add the fish balls.

๐Ÿฌ Cook for about 10 minutes, turning frequently until they are crispy and golden.

๐Ÿท Serve with a glass of wine, juice or warm milk! So yummy.

There is a popular joke that people who live in the villages live quality lives than those in the city.

This is mainly because they eat more organic food and infuse herbs and spices which are medicinal into their meals.

Mace is one of such spices with multiple medicinal benefits.

Its numerous health and nutritional benefits include; toothache reliever, reduces gas and digestive tract infections, improves skin tone and reduces nausea.
