Arroz rojo is a must know recipe for Mexican food, it’s simple to make and yet delicious. It goes great with any guisado as side dish.
Toast 1 cup rinsed long-grain rice in 2 tbsp oil until golden.
Blend 3 Roma tomatoes, 1/2 onion, 1 garlic clove + 1 cup chicken or veggie stock until smooth.
Pour into the rice and cook 2–3 min until the color deepens.
Add in total 2 cups of stock with tomato mix to the rice, and ½ tsp salt.
Bring to a boil, cover, and simmer on low 15–18 min.
Rest 5 min, fluff, and serve with your favorite dishes.
