and I have been experimenting with pizza in the new oven we bought for my NYC bagels. We tried Chicago deep dish tonight and managed, it was fantastic. I made the pizza dough and Maddy made the sauce. She added sliced cheese, mozzarella, sausage and chorizo to it. The flavours are so good together. This is our new favorite.

Back to a Christmas tradition. father made this for us about 20 years ago and it's been one of my favourite dishes since. This seafood soup filled with clams, 2 types of cockles, razor clam, red snapper and several other fish is truly delicious. The fish broth made the night before is an important factor but the toasted bread with a garlic sauce that sits underneath it all provides the flavour bomb you need. The sauce has quite a few fresh garlic cloves, pimento, cayenne pepper, olive oil, salt, pepper and a few other items for depth of flavour. We have this in Christmas eve and never fails to satisfy.
Cheers to Matteo my father-in-law, we miss you. Our first Christmas without you has been difficult. It's nice to make this and remember you.

My next... mission is a foray into mixology. My first attempt at whiskey sours. Not bad. Not bad at all.

Ingredients

60 ml (2 oz) bourbon or rye whiskey

22.5 ml (¾ oz) fresh lemon juice

15–20 ml (½–⅔ oz) simple syrup (adjust to taste)

Optional: 15 ml (½ oz) egg white for a silky texture

Ice

Garnish: lemon twist or maraschino cherry

Instructions

1. If using egg white: Add whiskey, lemon juice, simple syrup, and egg white to a shaker without ice. Shake hard for about 15 seconds (dry shake) to build foam.

2. Add ice and shake again until well chilled (about 10–12 seconds).

3. Strain into a chilled coupe glass (no ice) or over fresh ice in a rocks glass.

4. Garnish with a lemon twist or cherry.

There are few things you can't eventually find from the US here in the Netherlands. One of the most elusive {until now} has been a proper beef hot dog. I ate one at and asked them where they buy their hot dogs. I ordered a bunch for us and made these monstrosities. Chili cheese dogs of the highest quality. Equal parts delicious and messy and with the Pisco Sours I made is on the side made this an awesome meal for the homesick.

So today we were talking about one of our favorite meals together. After living in Shepard's Bush, London for a few years we came across, Ful. Basically, stewed.fava beans, onions and tomato paste. One of my favorite North African dishes. We would have fried fish and Ful at the Shepard's Bush market and it was incredible. So today we decided to recreate it. We fried some fresh local fish in my wok and made the Ful which was quite easy and Bam!!, a meal fit for an Egyptian king.

Some of the Netherlands best for lunch today. Smoked salmon belly, herring with onion and pickles and my homemade NY style bagels. We added some Italian capers and it was a feast fit for a king.
