Finally, we’re 💯 excited to be introducing the fourth member of the Foundry Easter family - Anamalai Estate, India 100%.

You read that correctly: 100% dark chocolate. These gloriously intense and flavourful chocolate eggs are sugar free, dairy free and gluten free – and made from just a single ingredient: cacao beans. With no added cacao butter.

Nestled beneath the coconut palms of Anamalai Estate in Southern India grows cacao that demands attention with its vivacious charm.

In our little chocolate factory just north of Auckland, New Zealand, we accentuate the remarkable personality of these cacao beans by crafting a chocolate with notes that ignite the senses like a vibrant rush of blood orange and balanced balsamic bliss.

🍫As bean-to-bar chocolate makers, we make the chocolate for these from scratch in our little chocolate factory. They’re also soy free, 100% plant based and vegan.

The chocolate eggs are packaged in a certified home compostable cellulose bag, and the printed outer is recyclable card.

⛰️Anamalai Estate is located in the scenic Anamalai foothills, near the town of Pollachi in Tamil Nadu state, adjacent to the Western Ghats, an ancient mountain range starting at the southwest of India. The region is famous throughput India for its high quality coconuts, with the growing of cacao a recent development, pioneered by Harish Manoj and Karthi Palaniswamy, who own and operate Anamalai Estate.

The Estate is made up of four plots joined by a central farm house. The plots are interplanted with cacao, coconut, nutmeg and pepper to diversify and keep the land healthy. Once the pods are harvested they are taken to the farm house and patio for cracking, fermenting and drying. All their cultivation decisions are made on site using principles of permaculture and aquaponics, as well as Korean natural farming techniques.

While this is the first year we’ve had our Seriously Dark chocolates as mini Easter Eggs, they’ve been well over a year in the making. They all started when a family got in touch last year asking if we could make a special batch of Easter Eggs for them using our extra dark chocolate. We gave it a go, not knowing quite how our Seriously Dark chocolate would perform as mini eggs - and it worked beautifully! Cue one very happy family come Easter time!

So fast forward to 2026, we decided to introduce our Seriously Dark chocolate as Eggs as part of the Foundry Easter Family. This meant investing in a new piece of equipment for our tempering machine (which was an excellent excuse for David to convince Janelle we needed more machinery!).

They have been so well received and made so many people happy they can have a minimal ingredient, dairy free, gluten free, and in the case of the 100%, sugar free Easter.🍫❤️🍫

Welcoming Easter Eggs for lovers of Seriously Dark Chocolate - for the first time, we’ve very excited to welcome our high percentage 90% dark chocolate to the Foundry Easter family.

In Western Uganda, smallholder farmers are producing extraordinary cacao, resulting in this seriously dark yet surprisingly light chocolate.

In our little chocolate factory just north of Auckland, New Zealand, we accentuate the remarkable personality of these cacao beans by crafting an elegant chocolate with notes of marshmallow, strawberries and a hint of toasted almond.

These delicious chocolate eggs are dairy free and gluten free – and made from just two ingredients: organic cacao beans & organic cane sugar. With no added cacao butter.

As bean-to-bar chocolate makers, we make the chocolate for these from scratch in our little chocolate factory. They’re also soy free, 100% plant based and vegan.

The eggs are packaged in a certified home compostable cellulose bag, and the printed outer is recyclable card.

The cacao beans we use to create this elegant and smooth dark chocolate come from Bundibugyo, Western Uganda, where Semuliki Forest cacao is grown by 3,400 organic smallholder farmers in the region, 52% of whom are women.

Latitude Trade Co. (LTC), the company that prepares and exports this cacao to us, is a registered B Corporation and operates a wide network of rural collection points where they purchase high quality wet cacao, paying at least 20% more to producers than other buyers in Uganda.

Introducing the second member of this years Foundry Easter family - the Gold medal winning Korosim Microlots, Solomon Islands 70%!

This year we’ve crafted a selection of our award-winning single origins into delectable bite sized miniature solid craft chocolate eggs.

While the Solomons consist of nearly a thousand unique islands, it is only three we’ve selected for the exquisite cacao in these chocolate eggs. Forests, rivers and seas have been crossed to bring you a chocolate that satisfies like a warm, lingering embrace.

In our little chocolate factory just north of Auckland, New Zealand, we accentuate the remarkable personality of these cacao beans by crafting a chocolate that delivers a journey suggesting caramels, toffees and sweet tropical zest.

These delicious chocolate eggs are dairy free and gluten free – because we make the chocolate for these from scratch in our little chocolate factory using only two ingredients - cacao beans and organic sugar. They’re also soy free, 100% plant based and vegan.

The eggs are packaged in a certified home compostable cellulose bag, and the printed outer is recyclable card.
 
The cacao beans we use to craft this warm and meandering chocolate comes from ten small villages and their microlot cacao farms, scattered among the three islands of Guadalcanal, Malaita and Vella La Vella.

The name Korosim derives from Solomons Pidgin English, meaning ‘crossing’ and is a fitting reference to the connection between not only the three islands but also the crossing of rivers, seas and rainforests. Listening to the journey of the crossings involved in collecting the beans provided the inspiration for the joyful packaging illustration that Janelle has created.

Chocolate creations that have become a well-loved part of Foundry didn’t always originate from a carefully thought-out business plan, or even from a plan at all.
 
This was the case with our mini solid Easter Eggs, now so loved by many, especially those who want fine flavour as well as a dairy free and gluten free experience. They came into being only four months after we had launched, when all-of-a-sudden our very first customers started asking us what we were doing for Easter!
 
We had been so focused on crafting our 70% single origin bar range to be the best that it could be, we’d not even thought about a craft chocolate Easter offering.
 
Thankfully our little Foundry team is nothing but nimble and resourceful, and we were able to create these delightful eggs, in their home compostable cellulose bags, with their recyclable toppers, that have now become a staple for many Kiwi Easter celebrations.

Sometimes the best moments are the unplanned ones.

They’re here! Easter Eggs have arrived!

This year, we’ve crafted a selection of our award-winning single origins into delectable bite sized miniature solid craft chocolate eggs.

We’re very excited and quite proud to share the first single origin of our biggest ever range with you: Pinalum, Malekula Island, Vanuatu 70%

In a remote, little pocket of forest in the northeast hills of Vanuatu’s Malekula Island, a group of dedicated farmers from Pinalum Village grow cacao that is deliciously soothing and mellow.

In our little chocolate factory just north of Auckland, New Zealand, we accentuate the remarkable personality of these cacao beans by crafting a chocolate that floods the senses with hints of sticky dark malt and rich caramel.

These delicious chocolate eggs are dairy free and gluten free – because we make the chocolate for these from scratch in our little chocolate factory using only two ingredients - cacao beans and organic sugar. They’re also soy free, 100% plant based and vegan.

The eggs are packaged in a certified home compostable cellulose bag, and the printed outer is recyclable card.
 
We are only crafting a limited number of each origin, so we’d recommend placing your order soon.

The cacao beans we use to make these chocolate eggs from comes from the lush and remote Malekula Island, where a small group of famers from Pinalum Village started specialising in fine flavour specialty cacao around 2018. Olivier Fernadez from , together with Roy and Lily Buktan from Pinalum, oversee and produce the outstanding cacao we love working with. Here at Foundry we’re proud to have been one of the first chocolate makers to source cacao from Pinalum and Gaston, and we love receiving each new harvest to see what flavour notes we’ll uncover in our test batches.

It’s here! Whisky Bar ‘25 edition is available online now! 🍫🥃

We are absolutely thrilled to release the fifth year of our Thomson Whisky collaboration. This special edition bar is the culmination of months of work and is one of the highlights of our year. There have been many different combinations of single origin pairings tried, and multiple test batches created, aged and tasted as David pushed the limits of what is technically possible with infusing cacao nibs.

🍫For our fifth, wild whisky release, we’ve gone full daredevil and paired Uganda’s playfully pink marshmallow persona with a serious selection of Thomson Whisky.

Mat Thomson has plumbed the depths of his barrel room again, and chosen an American Oak ex-bourbon barrel aged single malt, resplendent with tantilising tannins.

After flooding our cacao in a torrent of this luscious liquor, the resulting chocolate will have your senses tumbling around in creamy hints of dark dried fruits, wonderfully woody spice and of course big, bold barrel notes.

It’s a barrel load of fun that we can’t wait for you to experience.

We are so excited to announce that this year’s Special Edition Limited Release Whisky infused chocolate bar is almost ready for release.

⏰ This only happens once a year, only limited numbers of this special release whisky infused chocolate bar have been crafted, and our Whisky bar releases sell out quickly online - once they’re gone, they’re gone - so set your reminders for Sunday the 12th October, 4pm (NZ time).

A limited number of bars will be available from 9:00am - 3:20pm Monday - Friday at our Cellar Door in Silverdale.
And a selection of Foundry retailers will have their Whisky bars available from next week.
