I had a follower contact me 3ish weeks ago asking if I would be interested in these for dry storage. She has access to quite a few.....im using some but carnt use them all.....soooooo is anyone interested in any of these for their pantry/ dry storage or even putting aside for berry season for the freezer.

O my lunch to was soooooo simple but sooooo yummy.
My dear friend Amanda sent me a ticket token last night and I just knew I had to try it ASAP.
It involves potatoe.and cheese....i just knew i was going to love it.

I cooked a tennis ball sizeish potatoe in the microwave....you could use one of last nights leftover spuds or even mash potatoes.

Greated cheese of choice on the bottom...then the potatoe....then more cheese on the top.
You have to press quite hard to squash it down.....then leave it to do its thing. Don't be tempted to lift it to soon.....you gotta let it cook so it goes crunchy on the outside.
The video I saw put all sorts of things on top but I just had it by its self.
Its definitely my kind of thing and with kumara it would be even better i reckon.

Today was the day I bought a jar of my water glasses eggs in.....I'd used all my fresh eggs baking Saturday and Sunday.
These eggs were waterglassed in August 2025....so they are 1 year old.

How does water glassing eggs work I hear you ask.....well let me tell you.

You use fresh clean eggs πŸ₯š but never wash them as they need the bloom on them still to seal the shell.
You use pickling lime.... 3 table spoons to 1 lt/quart of water.
When you stir it it will go cloudy. Once the jar has been sitting a while the pickling lime will settle to the bottom.
Place your eggs very carefully in your jar or plastic bucket then pour the water/pickling lime solution over them making sure to cover them completely.
These are shelf stable for 2 years. I personally dont keep mine that long.
If you find a cracked egg after you have made the jar up...very carefully take the good eggs out pop into a new jar with fresh solution...throwing the cracked egg out.
So the pickling lime mixes with the water and fills all the tiny holes/pours in the shell.
With the pours filled it stops oxygen and bacteria going into the egg.
That's the simple explanation.

The yolk in the eggs will go runny. I use them for baking and scrambled eggs.
They aren't any good for poached or fried eggs because of the yolk not holding together.

Sooooo lunch today consisted of left over vedg... homemade sourcream...a tin of tuna...homemade garlic powder...some skinny noodles and a bit of of this and a bit of that.

Also my bargin of the day. The dates are frozen...I'm going to love using them. A fantastic price even if they are dated. They will be just fine.

The bucket of banana skins and egg shells are going to be dug into the garden some around the roses...... I already a rubbish bin full of banana skins in water.

Ok here's my thoughts on the butter I canned last week.
After the first go....filling the jars to full to fast....then making ghee.
I has another go the next day. This time I went a little slower and it worked much better.
I ended up with 3 500ml jars from 2lb.
I had 1 har that didn't seal....so i have learnt to wait till you hear the ping and they seal before you start mixing them up.

So my personal opinion after having a go....

Its a slightly different colour after the process than what you get in the block.

It tastes just the same as when it went in the jar.

Its a slightly different texture...it doesn't seem as smooth a very very slight gritty feel....however that could be me not mixing it well enough..... what do others that have done it think?

I set the timmer for every 20mins to remind me to mix it up. You feel like your there for hours.... but beware because it will stay mixed and set all of a sudden...so its super important to keep mixing it.

I love love love it for baking. Just grab a jar off the shelf...no need to soften it before you beat it with your sugar....as its spreadable from the jar.

For me personally I would only use it for baking at this stage. But if I got desperate enough and that's all I had I'd use it on a sandwich πŸ₯ͺ. Maybe its the fact I used unsalted butter. I think ill try with salted butter and see what I think.

So would I do it again....in a heartbeat I would if I ever find a fantastic special.

Over the next few weeks im going to make some homemade butter then can that and see how that goes so watch this space.

So that's just my thoughts....tell me what you think πŸ€”.

Still have some bananas left so I think it will be cakes tomorrow.

Earlier in the week I steamed juiced a bucket full of lemons.
I had the skins and flesh left over. I usually make a lemon jam from them but wanted to try something different this time.
So lemon/blueberry loaf it was...or rather 4 of them.
I just mashed them up.and used them like mashed bananas with the banana bread recipe.
I did worry it would be a little bitter as the pith from lemons is bitter.
I added some of my homemade lemon extract because I had steamed all the juice out of them so thought they might need a little extra flavor.
I whipped them up gave most of them away to taste testers.... one poor lady got one with some bigger bits that where bitter...so took took the out turned it into a crumble with some custard..... she said you couldn't taste the blueberries..but at least she found a use for it.
My neighbor sent me a text saying that it passed muster and they really enjoyed it.
That was the first batch.
The second batch I put less lemon in.... wizzed up so there are no big bits and I put some sourcream in the mix as well as I had to use it up. Im waiting to hear back from those people.....the little peice I had I really enjoyed.
So i have found another use for the steamed skins.....after all you can only have so much jam in the cupboard.
My banana bread recipe that i use is in the photos. Its a Jo Seager recipe.
I have also put an extra recipe that is one of my top ten....banana crunch cake...I love it because you don't need to ice them cake. Its just something a little different.
