When you feel like something yummy but your sick of the same old same old.... and sick of cooking for yourself..... well i thought why not make some savory muffins and try that bacon you pressure canned a few months back.
So thats exactly what I did.
I had some dry packed onions with herbs......some left over grated cheese that went in....then I greated more cheese for the top of the muffins 😋😋😋....I had 2 eggs...some sourcream.. 1 cup flour...a little baking powder...salt and pepper.....honestly I just winged it like I do everytime.
They came out fantastic.... I just had to have one straight from the oven....I'll take 2 to my 81 year old neighbor and have some with my soup thats cooking away on my fire 🔥 for dinner tonight.

When you have left overs and don't want to eat them for a week....you Pressure can them up.
I cooked pulled pork on the fire on Monday...
Had dinner and sandwichs for lunch Tuesday.
I have only just started canning leftovers. I was a little unsure if the meat would go dry from already being cooked.
Decided to give it a go with some nacho mince I had left over.
I have no idea why I waited so long...they were fine....so no more frezzer space being taken up with single meals. No more waste food is expensive enough especially meat.

I had a big can of baked beans that I have been wanting to break down for a while now... so Tuesday was the day.
Pork and beans 🫘 just not together. As they are Pressure canned for the same amount of time they can go in together.

I did cold pack so 3 lts/quarts of cold water in the canner.
Fill your jars leaving an inch head space.... wipe your rims seals on finger tight.
Bring your canner up to heat slowly then once the air lock is up start you 10min steam venting.
Pop your weight on once the 10min steam vent is up....bring it up to pressure....im under 1000ft so I use 10psi.....once at pressure start the timer....I was doing pint/500ml jars so I set my timer for 75mins.
Once it has finished processing turn your heat source off and let everything depressurise on its own.
Undo your lid and let it rest 10is mins ...then take your jars out and leave on the bench to cool and seal.
Take the screw bands off wash your jars and store in a cool dark place.

Love a cold wet rainy day.... its the perfect day to light the fire and cook dinner.
Perfect for fire top cooking or the slow cooker in a busy day.
Here's the recipe hope you enjoy.

Pulled Pork

1 pork roast
1 large onion chopped
3 Tablespoons of tomato paste
3/4 cup ketchup
1/4 cup apple cider vinger
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon mustard powder
1 teaspoon cumin powder
Salt and pepper

Combine everything except the pork in the bowl of your slowcooker. Mix well then add your pork and coat well.
Cook on high for 5 to 6 hours or low for 8 to 10 hours.
The meat should just fall apart. Pull it apart with 2 forks. In the bowl or take it out and do it on a plate. Just whatever works best fir you. Return back to the sauce mixe and serve on buns with coleslaw.
