Why is aged cheese so expensive? 🧀 It's not because it's posh.

Got aged Gouda in your fridge? Ageing dries cheese out: a young Gouda ripens for weeks, an old one for around a year, and the whole time it's slowly losing water. You're not paying for posh. You're paying for time. ⏳

Who put the holes in this cheese? 🧀🐭

Not a mouse! As Maasdam ripens, friendly bacteria inside it give off tiny bubbles of gas, and the bubbles become holes. Cheesemakers call them "eyes" 👀 The same bacteria give Maasdam its sweet, nutty taste.
