Cleardale Angus cattle are bred and managed to perform in high country conditions. To be a functional high country cow, she must wean an above average calf every year, lose weight through early lactation, replenish her reserves later in lactation and maintain condition on sub maintenance quality pasture from weaning through to calving.

The thing about animal breeding is you have to take a position on what traits will be relevant or demanded in the future, where the puck is going, so to speak. You won’t always get it right, and sometimes your timing will be off, but like in hockey, if you want to do well, then you need to be heading to where the action will be, not where it currently is.

Marbling is one of those traits that we’ve bought into our cattle but are yet to really see the market benefits from. But that’s where the puck is, not where it may be going.

When your cows hold their condition through a tough winter, you're saving on feed costs and setting yourself up for a better spring. When you're using bulls that sire easy calving, fast growing progeny, you're making money at the other end too. It's these fundamentals that make farming work. At the end of the day, we are in the business of breeding beef for the end consumer, so what goes on the hook matters just as much as what happens on farm. We're breeding cattle with marbling and carcass weights that deliver premiums. It's about adding value right through the supply chain.

IMF gives beef its flavour, taste, tenderness and juiciness, and processors are rewarding farmers who deliver it in their cattle because the more there is, the more beef the consumer demands.

The process of achieving IMF begins at conception, and there are a number of opportunities throughout the year when the farmer can get things right or wrong.

IMF develops in the perimysial connective tissue between muscle fibres, opening up and disrupting the organisation of intramuscular connective tissue, making it easier to chew. More fat within the muscle also improves the aroma and flavour of meat during cooking and eating. This is how we get tender, tasty beef.

Farmers around Australia and New Zealand are now selecting bulls with favourable estimated breeding value (EBV) figures for IMF because they want to breed progeny that will have good marbling at killing time. But there’s more to the equation – stock bred to deposit higher levels of IMF also need to be nourished to encourage the trait, and that nutrition starts in utero.

It’s important to note that the Mature Body Condition EBV provided by Angus Australia is genomically enhanced and has a very strong reference population, bolstered by the Angus Sire Benchmarking Program. Within the Angus Australia database, there are over 68,800 animals that have a phenotypic score for body condition. The greater the reference population, the greater the accuracy.

The Mature Body Condition EBV predicts the genetic tendency for a bull’s daughters to maintain body condition score throughout lactation to weaning. This trait reflects the cow’s inherent ability to partition nutrients efficiently between maintenance, lactation, and reproduction – essentially measuring metabolic efficiency at the cow level.� �
