Is the fridge looking a little empty? This Leftover Loaf is your end-of-week saviour 🙌 Packed with veggies, herbs, cheese and Better Eggs, it’s hearty, wholesome and super easy.

Slice it thick, toast it up, and serve with butter, chutney, or a simple salad. Done.

Here’s how to make it:

Ingredients:
• 2 cups cooked or grated veggies (carrot, spinach, corn, beans, peas – whatever you’ve got!)
• 2–3 spring onions or red onions, sliced/diced
• Handful of fresh herbs (parsley, mint, coriander – mix it up!)
• 1 cup self-raising flour
• 5 Better Eggs, lightly beaten
• 100g cheese or feta, plus extra for topping
• ¼ cup olive oil, plus extra for drizzling
• ½ tsp salt
• ¼ tsp pepper

Directions:
1️⃣ Preheat oven to 180°C. Line a loaf tin with baking paper.
2️⃣ In a big bowl, mix all ingredients together.
3️⃣ Pour into loaf tin, top with extra cheese + drizzle of oil.
4️⃣ Bake 40–50 mins (until a skewer comes out clean).
5️⃣ Cool 10–15 mins before slicing.

When life gives you lemons… make lemon bars!

Got a lemon tree bursting with fruit? It’s time to put them to good use. These Lemon & Coconut Bars are the ultimate way to bring a little sunshine to your kitchen this winter. 🍋🌿

You’ll need:
2 Better Eggs® (plus 1 egg white for the frosting!)
125g butter
225g caster sugar
1 lemon – rind + juice
150ml yoghurt
140g self-raising flour
85g Desiccated Coconut

Frosting: 1 egg white, 200g icing sugar, 1 tbsp lemon juice
Topping: Extra Shredded Coconut, toasted

How to make them:
- Cream butter + sugar until fluffy, then beat in your Better Eggs® one at a time.
- Add lemon zest, juice + yoghurt. Fold in flour and coconut.
- Bake at 180°C for 35 mins, cool on a wire rack.
- For the frosting, lightly beat the egg white, stir in icing sugar and add enough lemon juice to mix into a paste.
- Spread the icing thick, and top with toasted coconut.
- Slice into bars and enjoy with your favourite cuppa.

If you’ve got eggs and veg, you’ve got dinner. Or lunch. Or brunch. These Vege Fritters are endlessly adaptable – the kind of recipe that works with whatever’s in your fridge and lets you get a little creative in the kitchen 🍳

The Base:
- 600g fresh or frozen veg (grated or chopped)
- ½ cup self-raising flour
- ½ tsp salt
- 3 Better Eggs® 🥚 (whisked)
- A splash of oil for the pan
- PLUS your favourite herbs, spices or cheese... this is where the fun begins!

Fritter flavour inspo:
- Courgette + dill, mint, feta + lemon zest
- Carrot + cumin, spring onion + parsley
- Kumara + dill, feta + spring onion
- Cauliflower + curry, turmeric + coriander

Spoon into a hot pan, sizzle till golden, and serve with chutney, yoghurt, or a fresh leafy salad. Simple. Satisfying. Seriously good.

What a Night! 💛

Last week, Crack Open the Chat, proudly hosted by Better Eggs, brought our South Waikato community together for a powerful evening of connection, courage, and conversation.

A heartfelt thank you to our event partners Westpac NZ and the Waikato Hauraki Coromandel Rural Support Trust for making this night possible, and to our major sponsors Trinity Lands, Van Dyks, and Fonterra for their generous support. And to our incredible community – thank you for showing up. Your presence, energy, and support made this event something truly special.

We’re still buzzing from the impactful kōrero shared by Sir John Kirwan - Westpac Ambassador and Marc Gascoigne – two champions for mental health who reminded us all of the importance of checking in with our mates and looking after our mindset.

We’re proud to say we’ve raised an incredible $76,000, with just $4,000 to go until we hit our $80,000 goal for the Waikato Rural Support Trust!
