Throwback to Tokyo Tonkatsu at Gyukatsu Motomura - pretentious dorks seem split on it, but as a pretentious dork I thought it was goddamn amazing. The sauces, the miso, the beef and a little hotplate!

Hello!

A quick check in with you, my closest friends, to make sure you are eating dumplings - but if not, that you have a elegant storage of dumplings. Like I do. That can be raided after a day of work that quite frankly, was unfair.

I'll be honest with you, no idea what these were. Pork and wine dumplings from Xmas? Chicken and chive from yesteryear? Who cares. The gallon of spicy j**m in the bowl makes it all even out in the end.

Now, you know how to make dumplings, so, let this serve as a reminder.

I know, I know - yet another noodle, yet another bowl.

I get it, I see you - but what you must understand is that this broth is homemade (from my ancient bag of animal bones I was collecting), and these Lamb and Cumin Xinjiang dumplings, also belonging to an equally flavoursome spirit.

The spice does make you sweat, but I collect my bodies moisture in Stillsuit, nothing is wasted, and as I continue to hurtle toward Instagram fame, this is what's guides me.

Here are some Hong Kong style Swiss Wings. Poached then braised in soy, oyster sauce, a real s**tload of sugar, cinnamon, star anise and black cardamom. Kewpie and Hot Sauce for the finishing dunks.

Speaking of dunks, these wings are meant to slide into my enormous gullet like Arsenal are sliding wins into the Premier League. It's couch and highlights time.
