I’ve had a few people call me in the last couple of weeks excited to see their olives ripening - and it is awesome to see those wee green fruits slowly changing and getting ready to be picked. But depending on the variety they may only be coloured on the outside and still green on the inside. Best test is to squeeze the olive and feel how easy it is to squish and if you get that lovely milky liquid coming out that’s a great sign!
The other thing to keep in mind is that olives need to be picked no more than 24 hours before being pressed otherwise they begin to turn rancid and can’t be made into EVOO.
