Fourth-generation pisquera Giuliana Velsor is teaming up with Dale at Stage Left Steak on Sunday, May 17! Dale will be personally crafting his world-renowned cocktails behind the bar, while Giuli pours four of our family’s heritage expressions—including our cornerstone Pisco Quebranta—for an exclusive afternoon of incredible drinks.

Pisco Cocktail Party Details:
• A Guided Tasting and History of Pisco with Dale & Giuli (optional)
• Pisco Cocktails (mandatory)
• Passed Hors d’Oeuvres

A Figure Of Restraint, A Wine Of Excess.

Prophet Series, a curated collection of contemplative wines, finds its first expression in Bautista. Inspired by John the Baptist—a figure of restraint set against excess—the Baroque imagery invites reflection, but the wine itself embraces decadence: a tension between discipline and indulgence, tradition and temptation, honoring the legacy of San Juan Bautista through this unique, limited release.

Bautista is a barrel-finished dessert wine crafted from native, estate-grown Peruvian grapes and matured in single-use American oak whiskey casks. The result is a naturally sweet, full-bodied expression layered with caramelized fruit, roasted toffee, and warming spice—a contemplative yet indulgent finish meant to be savored slowly.
