For our second journey across Northern Samar, we visit the coastal municipality of Biri, where fresh seafood is part of everyday life. Today’s featured dish is Kinilaw nga Isda (Waray-Style)—a refreshing recipe commonly enjoyed in coastal communities, made with fresh fish, native vinegar, calamansi, ginger, onions, and chili.

Ginataang Hipon sa Kalabasa at Sitaw

📍 Allen, Northern Samar

📝 Ingredients

* ½ kg fresh shrimp (hipon)
* 2 cups kalabasa, cubed
* 1 cup sitaw, cut into 2-inch pieces
* 2 cups kakang gata (first coconut milk)
* 1 cup pangalawang gata (second coconut milk)
* 1 medium onion, sliced
* 3 cloves garlic, minced
* 1 thumb-sized ginger, julienned
* 2 tbsp patis (fish sauce)
* Salt and ground black pepper, to taste
* 2 tbsp cooking oil
* Malunggay leaves (optional)

👩‍🍳 Quick Cooking Guide

1️⃣ Sauté the garlic, onion, and ginger until fragrant.
2️⃣ Add the kalabasa and sitaw, then cook for 2–3 minutes.
3️⃣ Add the shrimp and cook just until it starts to turn pink.
4️⃣ Pour in the second coconut milk and let it simmer until the vegetables are tender.
5️⃣ Add the first coconut milk, season with patis, salt, and pepper, then simmer gently without boiling vigorously.
6️⃣ Stir in the malunggay leaves and serve hot with steamed rice.

💡 Cooking Tip: Add the shrimp near the end of cooking to keep it tender and juicy.
