We are a breeder specializing in rearing chickens with Fibromelanosis, making them mostly black, including feathers, beak and internal organs. Here at Pollo Negro, we focus solely on raising Black Chickens, allowing us to cater to their unique needs and requirements. Black Chicken is a delicacy all over the world; it is an exotic breed from Asia with medicinal properties and an amazingly moist and
subtle gamey flavor. It has taken many years to learn how to best provide it with the right environment for it to thrive and become one of the tastiest table birds available today. The chicken matures slowly and can take up to four times as long as a standard broiler to reach a top weight of one kilogram; this slow rearing process is what gives the bird its full flavor and juicy texture. Our birds are raised in airy, warm sheds with natural light and plenty of room to 'chicken around', allowing the bird to grow properly and happily before being finished. It is this care and attention to the chickens needs that makes our farming method less intensive, resulting in a lovely finished product. Our philosophy is to combine modern farming techniques with respect and knowledge for the needs of the animals, resulting in a wonderful bird that is happy, healthy, and delicious.
