“What we’re most proud of at Catsu-Chan is our modern take on Japanese-inspired food. We respect the foundations of Japanese cuisine, but we also enjoy giving familiar dishes a new identity through local flavors, current food trends, and ideas that feel more relevant to today’s diners.
A good example is our Kinii-Yama, where we incorporate kiniing, a traditional Cordilleran smoked meat, into ramen. It reflects what we want Catsu-Chan to be: Japanese-inspired at its core, but not afraid to bring in flavors from Baguio and the Cordilleras and turn them into something new.
We also see every stage of Catsu-Chan’s growth as an opportunity to keep refining what we serve. We carefully choose our ingredients, listen closely to our guests, and use that feedback to sharpen our flavors and develop a menu that feels both thoughtful and current. For us, tradition is the foundation, not the limitation. We want Catsu-Chan to feel familiar, exciting, and always a little unexpected.”
