The very first review comes from none other than Dirkidoo himself. Fitting, really, this pasta was made with his picky little palate in mind. It’s only right that our first post in this album begins with him. A truly heartwarming Pasta Story, if we’ve ever had one.

Some recipes are born from tradition. Others from necessity. And then there are those that evolve, little by little, adjustment by adjustment, until they become exactly right.

Dirk was always lukewarm about pasta. He didn’t hate it, but it never really held his attention. At that time in my life, I was falling headfirst into a love affair with pasta. I was experimenting with sauces, testing textures, making batch after batch like each one could expose a long-held secret.

Food has always been my love language. And with then-little Dirk, our best conversations happened at the table, mid-bite, between stories and sips. But pasta alone couldn’t hold him.

So I made it a quiet mission. A personal quest to create a pasta he wouldn’t just eat, but ask for. I knew it had to have one thing: cheese. Not just a sprinkle, but enough to stretch and melt and linger. Something warm, familiar, and completely irresistible.

I started with a recipe printed on the back of a tomato sauce packet. It called for tuna. Problem was, Dirk doesn’t like fish. Dang. But I went for it anyway quietly hopeful, fully prepared for rejection.

From there, every tweak was in his honor. And then, Celerinapie, my friend from Instagram, introduced me to a two-ingredient bechamel sauce. It was a simple addition, but the kind that ties everything together. Not the secret ingredient, but the missing piece.

Then came the moment I’d been waiting for. Dirk asked for seconds. I stopped adjusting. Mission accomplished!

I served it first for family and relatives. Well, exclusively for family and relatives. Then my brother carried it into his office birthday gathering where skeptics who usually reach for rice lined up, wiped the tray clean, and tip-toed back for more.

Finally, I brought it to our fellowship and happened to be seated next to a group of special guests we had over that one time and couldn’t help but eavesdropped on them praising the pasta. I was more surprised than they were.

This dish began as an experiment and became a small comfort passed from the home of one family to relatives, colleagues, and close friends.

It belongs to Dirk, not just in name but in the way it fits him perfectly, like a song played in the right key.

Some foods fill the stomach. Others fill the soul.

This one does both.

Pro tip: If you’re like Dirk, keep the parmesan close. Some things are too good to ration.
