If you’ve never tried Iron Eggs, here’s what to expect 👇

At first bite, it feels firm — not soft like a regular boiled egg.
As you chew, the egg white becomes chewy and dense, almost like a savory snack, not ulam.

The flavor is:

Soy-savory

Slightly sweet

Deep, not salty

Very “nakaka-adik” with every bite

The yolk stays solid and rich, balancing the chewy white.

👉 It’s not meant to be fluffy.
👉 It’s meant to be slow-chewed and enjoyed.

Iron eggs are a Taiwanese street delicacy, made through days of braising and air-drying, which is why the texture is different — and special.

This is something new for Davao, and we’re currently in our testing phase, perfecting the process.

Today marks the start of something new.

Our first batch of Davao Iron Eggs is now brining — beginning a slow, multi-day process of soy braising, resting, and drying to build the deep flavor and chewy texture iron eggs are known for.

This is still part of our testing phase, where we focus on:
✔ flavor balance
✔ texture
✔ process consistency

No shortcuts. Just time, patience, and careful handling.
