Did you know that sapin-sapin means “layers” in Tagalog? This colorful rice cake from Abra is made with glutinous rice flour, coconut milk, and sugar, then steamed layer by layer in three distinct flavors: purple yam (ube), jackfruit (langka), and sweet coconut. Each slice is often topped with crunchy golden latik, or caramelized coconut curds, that add the perfect finishing touch. A true fiesta favorite, sapin-sapin is as fun to look at as it is to eat!
