Ingredients:

• 1 lb beef sirloin, thinly sliced against the grain

• 1 tbsp cornstarch

• 1 tbsp soy sauce

• 1 tbsp Shaoxing rice wine (optional, but adds depth of flavor)

• 1 tsp sesame oil

• 1 large onion, thinly sliced

• 1 bunch bok choy, stems and leaves separated and chopped

• 2 cloves garlic, minced

• 1 inch ginger, minced

• 2 tbsp vegetable oil

• 1/4 cup beef broth

• 2 tbsp oyster sauce

• 1 tbsp brown sugar

• 1 tbsp dark soy sauce (for color)

• Green onions, chopped (for garnish)

Instructions:

- 500g pork ribs, cut into 1-2 inch pieces
- 200g green beans, trimmed

- 3-5 dried chilies
- 1 tbsp cooking wine (e.g., Shaoxing wine)
- 1 tbsp sugar
- 1/2 tsp dark soy sauce (for color)
- Cooking oil
- Salt and pepper to taste
- 1 cup water or broth

Instructions:

1. Blanch Ribs:
- Bring a pot of water to a boil. Add the pork ribs and blanch for 3-5 minutes to remove impurities. Rinse the ribs under cold water and set aside.

2. Prepare Green Beans:
- Trim the green beans and set aside.

3. Sauté Aromatics:
