Ingredients:
3 cups glutinous rice
3 cups water
2 cups coconut milk
1/2 cup ube condensed milk

For filling:
2 cups grated coconut
1 cup water
1/4 cup sugar
1/2 tsp salt

✅boil water with sugar and salt, add the grated coconut let it cook for around 10 minutes. Bukayo is ready! Set aside.
✅wash and cook the glutinous rice with 3 cups water
✅ In a pan, add coconut milk and let it simmer for few minutes. Add ube condensed milk , let it boil for a few minutes. Add the cooked glutinous rice. Keep stirring until liquid is reduced and the rice becomes oily. Ube biko is ready!
✅ use a large putocheese molder panghulma, fill with bukayo or the sweetened coconut .
serve and enjoy
