Taste-testing & measuring the alcohol content of our next brews. Our guyabano wine has been fermenting for 6 months, so the taste is already smooth, revealing a fruit-forward dryness that balances with its acidity and sweetness. The coffee-vanilla wine however (with the beans sourced from our local farmer's cooperative), has been fermenting for only 3 months so the taste is quite complex, that the flavor initially tastes subtle but then leaves sour hints after swallowing. This one's a little more sweet and very, very aromatic. Alcohol content of Gubayano is 14%, the coffee-vanilla 12% for now but it's still fermenting. We just backsweetened it maybe the alcohol will still rise up. We'll release them on December for the Holidays. 💖
