Less oil para mas pina healthy

Ingredients:

Dipping sauce:

2 cups vinegar
1 cup white sugar
1 tbsp salt
8 garlic cloves
1 red onion
2 red chilies

1 red onion

1 large sweet potato
1 medium size carrot
1 large potato
1/4 kilo bean sprouts
1 tsp ground black pepper
Half of large cabbage
3 tsp chicken powder
3 tbsp oyster sauce
Local spinach or kulitis
Sesame seeds
Rice paper

Procedure:

For the dipping sauce chop the onion, chilies and garlic in mince. Combine the ingredients all together mix well the set aside. Sauté onion and garlic add sweet potatoes, carrots and potatoes. Sauté until half cooked. Add cabbage then season with pepper, chicken powder and oyster sauce. Add local spinach sauté until done then add sesame seeds (optional). Set aside and wait until cooled down. Dip rice paper in water then put some veggies at the center wrap with rice paper then ready to serve.

Chicken bopis

Ingredients:

500g Chiken gizzards
Water
1 tbsp salt
Lemon grass

2 pieces medium size carrots
1 large radish
1/2 tsp salt
1/2 tsp ground black pepper
1 green bell pepper
1 red bell pepper

1 kilo chicken liver
Pinch of salt and pepper

100g margarine
1 small thumb ginger
2 red onion
1 whole garlic head
Chicken from the liver (cut in small pieces)
1/2 kilo chicken thighs fillet
4 pieces laurel leaves
1 tsp ground black pepper
2 tbsp vinegar
2 tbsp soy sauce
2 tbsp oyster sauce

1 1/2 tbsp annatto powder
2 1/2 cup hot water

4 pieces red chilies
4 pieces long green chilies
2 chicken cubes

Procedure:

Combine water, salt, chicken gizzards then boil until tender. Cut in small pieces when done. Chop the carrots, radish, red and bell pepper into small cubes. Add pinch of salt and pepper in Chicken liver then pan fry. When done chop in small pieces. Sauté carrots, radish, red and bell pepper until half cooked then season with salt and pepper. In a large pan melt margarine. Sauté ginger, onion and garlic. Add Chicken heart and chicken fillet cut in small pieces. Add chicken gizzards, laurel leaves, ground pepper cook until tender. When tender add vinegar, soy sauce, oysters sauce then mix well. Combine annatto powder and hot water then pour in pan. Mix well then cook until liquid will slightly dries up. When liquid dries up add cooked Chicken liver stir fried veggies, red chilies, green long chillies chopped in small pieces and chicken cubes then cook for 5 minutes. Then ready to serve!

Veggie hotdog

Ingredients:

1 kilo ground pork
1 medium size carrot
1 red onion
1 whole garlic head
Kinchay or wansoy
Spring onions
180g pumpkin
2 tsp salt
1 tsp ground white pepper
2 tbsp chicken powder
1 tsp garlic powder
1/2 cup cornstarch
1/2 cup very cold water

Procedure:

Chop the veggies into mince. Combine the veggies and ground pork in food processor then blend until mixed thoroughly. Add salt, white pepper, chicken powder, garlic powder, cornstarch then mix well. Add very cold water then mix again. Scoop 1/3 cup then wrap in a blanched banana leaves. Tie both ends to seal. Arrange in a pot then add water. Boil for 20 minutes. After 20 minutes remove from pot then wait until completely cooled down. You can put in the fridge or pan fry immediately to taste!

Malunggay palitaw balls

Ingredients:

2 pieces grated coconut meat
2 1/2 cup malunggay leaves
1 3/4 cup water
1 kilo glutinous rice flour
4 tbsp vanilla
1 cup white sugar
Water ( adjust according to flour absorption)
Quick melt cheese

Procedure:

Steam grated coconut meat in 15 minutes then set aside. This is to prolong the shelf life of the coconut meat that is why we need to steam. Combine malunggay leaves and 1 3/4 cup water in food processor. Blend until smooth then set aside. Combine glutinous rice flour, sugar, vanilla and blended malunggay leaves then mix well. Add water gradually until dough consistency. When you reached dough consistency scoop 1/8 cup each make a ball shape then flatten. Put quick melt cheese at the center. Pinch edges to seal. Roll again to fix the shape. Put the dough in boiling water then wait until it floats. Remove when floats using strainer to remove excess water. Let the excess water drip then cover with steamed grated coconut meat. Serve and enjoy!
