Chicken bopis
Ingredients:
500g Chiken gizzards
Water
1 tbsp salt
Lemon grass
2 pieces medium size carrots
1 large radish
1/2 tsp salt
1/2 tsp ground black pepper
1 green bell pepper
1 red bell pepper
1 kilo chicken liver
Pinch of salt and pepper
100g margarine
1 small thumb ginger
2 red onion
1 whole garlic head
Chicken from the liver (cut in small pieces)
1/2 kilo chicken thighs fillet
4 pieces laurel leaves
1 tsp ground black pepper
2 tbsp vinegar
2 tbsp soy sauce
2 tbsp oyster sauce
1 1/2 tbsp annatto powder
2 1/2 cup hot water
4 pieces red chilies
4 pieces long green chilies
2 chicken cubes
Procedure:
Combine water, salt, chicken gizzards then boil until tender. Cut in small pieces when done. Chop the carrots, radish, red and bell pepper into small cubes. Add pinch of salt and pepper in Chicken liver then pan fry. When done chop in small pieces. Sauté carrots, radish, red and bell pepper until half cooked then season with salt and pepper. In a large pan melt margarine. Sauté ginger, onion and garlic. Add Chicken heart and chicken fillet cut in small pieces. Add chicken gizzards, laurel leaves, ground pepper cook until tender. When tender add vinegar, soy sauce, oysters sauce then mix well. Combine annatto powder and hot water then pour in pan. Mix well then cook until liquid will slightly dries up. When liquid dries up add cooked Chicken liver stir fried veggies, red chilies, green long chillies chopped in small pieces and chicken cubes then cook for 5 minutes. Then ready to serve!
