"Mana Pulutan" is an innovative Filipino food concept by Coconut Chef Riza Matibag Muyot that reimagines traditional Filipino heritage dishes as gourmet small plates, similar to Spanish tapas or French hors d'oeuvres, to be enjoyed in various settings beyond just drinking gatherings. The term combines "Mana," referring to heritage, with "Pulutan," the Filipino term for small plates dishes eaten with drinks, but expands its use to all types of dining and celebrations.

What is Mana Pulutan?

Heritage in Small Plates:
It's a culinary approach that transforms classic and regional Filipino dishes into smaller, more refined servings.

Beyond Drinking:
While "Pulutan" traditionally refers to snacks for alcoholic drinks, "Mana Pulutan" is presented as an innovative food concept for all occasions and celebrations.

Gourmet Experience:
The dishes are curated to highlight Filipino heritage and flavors, often featuring ingredients like coconut, and are served in a gourmet style.

Food as an ART:
Mana Pulutan is also a science and an ART form in serving food using wood, stone, and nature's bounty (like bamboo, leaves, edible flowers & herbs) in plating and table settings.

The Concept's Originator

Yes, with small servings, any dish can be considered , as it is defined as "pulot" to grab or finger food or small servings of food in small plates like the Spanish Tapas, Jordanian & Mediteranian Mezza , French Hors d' Oeuvres, Italian Antipasti or Cicchitti, Japanese Sozai, Hawaiian Pu pu, Russian Zakuski and more.

MANA PULUTAN - a new Innovative Food Concept for Filipino heritage & traditional cuisine in small plates that can be served in Gourment Buffet Tasting Menu style or in platters. Mana Pulutan is the perfect way to present Filipino Hetitage Cuisine in Social Events, Cocoktails, Food Fairs and Festivals in the Philippines and around the world.

No, PULUTAN are not dishes inspired by the Spanish Tapas. PULUTAN is our very own - the Filipino version of Spanish Tapas. So, for Filipino Dishes served in small platters or small servings, we should call them PULUTAN not even Filipino Tapas. Tapas is Spanish. PULUTAN is Filipino. For Heritage Filipino Dishes in small plates or small servings, MANA PULUTAN can be the appropriate term meaning Heritage (Mana) and Pulutan (Filipino Dishes in small plates).

All eyes (and taste buds) were on CocoKusina as it brought coconut heritage and innovation center stage at the World Coconut Congress 2025.
Coconut chef Ninang Riza, the visionary behind CocoKusina and its CocoCore philosophy, she revealed how the coconut’s 5 core essentials—amino, milk, oil, vinegar, and sugar—can unlock flavors that inspire chefs and transform kitchens everywhere.
At the heart of CocoKusina’s live cooking demo were its standout creations: the signature Tuba S**a aperitif, a palate-captivating blend with a bold coconut twist; the refreshing Buking—coconut water infused with ternatea; crispy wonton with curry leaves and salted egg; and carpa egg roe with crackers.
Taking center stage was Fiesta sa Gata ng Calabarzon, CocoKusina’s tribute to regional coconut dishes:
• 𝗞𝘂𝗵𝗼𝗹 𝘀𝗮 𝗚𝗮𝘁𝗮 – escargot in coconut milk, Cavite’s heritage dish
• 𝗔𝗽𝘁𝗮 𝘀𝗮 𝗚𝗮𝘁𝗮 – small shrimps in coconut milk, a delicacy of Laguna
• 𝗞𝘂𝗹𝗮𝘄𝗼 𝗧𝘂𝗹𝗶𝗻𝗴𝗮𝗻 𝗦𝗶𝗻𝗮𝗻𝘁𝗼𝗹𝗮𝗻 – mackerel with cottonfruit in coconut milk, a Batangas favorite
• 𝗞𝘂𝗹𝗮𝘄𝗼 – banana blossoms in coconut milk with roasted shrimps, a Quezon classic
