Batwan Lechon Manok Pinitaw
Now available at Jose & Nana's ✨

In many Filipino kitchens, one dish often becomes another.

Pinitaw comes from punit — to tear or pull apart. Cooked meat is shredded, returned to the pan, and transformed through heat into something new.

Our version begins with our Batwan-stuffed Lechon Manok — slow-roasted, then hand-pulled and cooked into savory adobo flakes with garlic, vinegar, and its own rich oils.

The gentle sourness of batwan lingers in every strand.

This is Batwan Lechon Manok Pinitaw.
Another continuation of a favorite.
