“The best chicken mandi you’ll ever have”🫶🏻
Chicken Marination:
Mix together mustard paste, BBQ sauce, lemon juice, soy sauce, salt, paprika powder, tikka masala, red chili powder, and garlic powder. Marinate both sides of the chicken with this mixture and let it sit for at least 1 hour.
Mandi Rice Preparation:
Roast cashews and almonds in oil for 2-3 minutes. Set aside. Add more oil and fry onions until brown. Add whole spices and fry for 4-5 minutes. Add salt, red chili powder, coriander powder, and Mandi masala. Mix well.
Add the whole chicken and some water. Cover and cook for 30 minutes or until the chicken is tender. Remove the chicken and fry it in another pan until crispy.
For the rice: add 7-8 glasses of water to the previous pan and bring to a boil. Add soaked rice and cook until the water dries up. Add food color, roasted cashews, and almonds. Let it steam for 15 minutes.
