In the loving and ever living memory of my father, I present to you his favourite dish- Grilled buffalo Chicken with stewed Brocolli and lemon Butter sweetcorn served with a side of mash & gravy.

I never got around to making this dish, in over 3 years, ever since he passed away. But today, I thought I would celebrate him & his fuss-free, easy going pallette for all things delicious!

Papa, as you used to say, "best Meal Mehru!", that's exactly what everyone else said too.

🍯Honey Soy Sesame Chicken✅

500 grams boneless chicken cut in small cubes
1 egg
5 tablespoon cornflour
1 tsp paprika
1 tsp salt/pepper

⭐Coat the cubed chicken in 1 beaten egg & seasoning.
⭐Toss individual cubes in cornflour and set aside

For the sauce:
4 cloves of garlic - smashed and finely chopped
1/2 onion - finely chopped
2 gigantic green chillies- sliced vertically
1/2 carrot - Julienne
1/2 capsicum-julienne
4 tbsp sesame oil ( or regular)
2 tbsp dark soya
2 tbsp tomato paste
1 tbsp honey by .mountain.honey
I also added:
1tsp tamarind paste by
1 tsp soybean paste on chilli oil by

In a wok, add oil
Add garlic, onion, chillies, carrots, capsicum and stir fry for 6 to 8 mins on medium

Now add your coated chicken cubes (yup no need to seperately deepfry wohooo! Saving time & calories) and stir fry until golden brown!

Now add your dark soy sauce, tomato paste, tamarind paste, soybean paste and mix well.

Add a little water for gravy.

Now bring out those flavours with a generous honey drizzle!

On a pan, toast sesame seeds and sprinkle over your dish

Serve with rice or stuff in lettuce leaves!

🍓Strawberry Lemon Mousse Crumble /Ultimate comfort summer dessert

Recipe for 8 to 10 people:
What you need:-
3 packs of
1 can condensed milk
2 tsp of gelatin (dissolved in 1/2 cup boiling water)
1 cup freshly squeezed lemon juice
10-12 marie biscuits
15 candi biscuits
1/2 cup melted butter
Strawberries to top

What you need to do:-

🥣In a large bowl, add 3 packs of cream, condensed milk, lemon juice and gelatin & whisk for about 4 to 5 mins.

**I usually put my bowl in the freezer for 1 hour before adding in all my ingredients for whisking for that extra instant thickness.

🍪Blend the biscuits in a food processor. You can blend them together or one by one. You can add butter now to make a crumble.

🍽 In a dish, place your cookie crumble.(save some for topping) Set it down and flatten with a spoon.

🥄Spoon over your lemon mixture and spread it out evenly.

🍓Place sliced strawberries and remaining crumble on top and refrigerate for 2 to 4 hours!

Best served chill!

LINGUINE WITH LEMON, GARLIC AND THYME MUSHROOMS / When I say this is
"Better than the best pasta I've ever had" I really mean it, standing out in all its simplicity, with the most elaborate flavours!!!!

The herby fresh mushrooms & parmesan, tossed in a heavenly marinate surely was a winner today!

thanks for this insanely delicious treat!

Now Im going to try and replicate this!

Waffles🧇 & eggs 🍳
Is one of the most underrated breakfast combos!

The subtle sweetness of the waffles and the runny eggs on top make this the most comforting combo ever!

My preferred South asian pallette is always up for a side of roasted peppers, spring onions and splash of microgreens 🍀 However you can also add your favourite coldcuts 🥓 🥩 or 🥑 and lettuce with a dash of hollandaise sauce to make this the perfect brunch sandwich!

My weekend (preferably) is always a "night in" with my girls.

Its my time to unwind, chill, have comfort food with even more comforting conversations.

We did all this over a mezze box by this weekend & It was worth every nibble!

The labneh was thick and creamy, with the right amount of tanginess

The hummus was also authentic and delicious.

However, the 🌟 of this box are the nutty, crunchy falafels and the buttery, soft bread sticks!!

Both healthy dips go well with toast as spreads too♡

Perfect for 3 to 4 people to sit down & enjoy over as a snack!

It's a cloudy Sunday⛅ so I suggest you get a hold of a pumpkin 🎃 which is easily available at any well-stocked vegetable shop and stir up some Pumpkin Soup!

My sister, made this bowl of comfort with recipe by my soulsister & it surely feels like a warm big HUG in a bowl!

I added it roasted red chillies and roasted pinenuts for that extra chilli and nutty flavour & topped it with crispy croutons for that crunch!

Ingredients
-0.5kg pumpkin 🎃
- 1 potato 🥔
- 4 cups water + 2 knorr cubes of stock to make stock or you can use fresh chicken/veggie stock
- 1 cup milk

Method:
- cut pumpkin & potato into cubes

- add cubes of pumpkin and potato and boil in chicken stock.

- once veggies are soft, take them out and let them cool down a bit

- blend the soft veggies with a hand blender or add to a mixer and blend

- once blended into a purée, add it back to pot and add 1 cup milk.

- once that comes to boil.

Taste and Add salt, pepper, nutmeg and cinnamon powder.

Garnish with croutons, roasted peppers, roasted pine nuts, dried herbs and serve with a side of crackers!

Always serve up ANY chaat, with a chutney/topping thaali!

Be it chaana chaat, aaloo chaat, mix chaat, dahi phulki or papri, serving it alongside different toppings surely takes it to the next level!
