SAHERI SPECIAL ALOO KI KATLIYAN RECIPE BY CHATKHARAY

INGREDIENTS:
Potatoes 3 large, thinly sliced
Ginger garlic paste 1 tsp
Onion 1 small, chopped
Tomatoes 1 medium, chopped
Red chili flakes 1 tsp
Red chili powder 1 tsp
Turmeric powder 1/2 tsp
Cumin seeds 1/2 tsp
Green chilies 2, chopped
Green coriander leaves 2 tbsp , chopped
Oil 1/2 cup
salt to taste

METHOD:
In a pot add oil and onion, fry till soft. Now add cumin seeds and stir for a few seconds. Add ginger garlic paste and stir for few minutes. Now add chopped tomatoes and all other spices. Keep on stirring by adding 1 tbsp water 2 -3 times. Tomatoes will become soft and mashy. Now add potatoes and add little amount of water and cover with the lid. Let it cook till tender.Add chilies and coriander. serve hot with paratha

IFTARI SPECIAL CALIFORNIA PANINI SANDWICH RECIPE BY CHATKHARAY

INGREDIENTS:
Chicken fillet. AS Reuried
Salt 1/4 tsp
Black pepper ¼ tsp
Paprika 1 tsp
Garlic 1/4 tsp
Hot sauce 2 tbsp
Soya sauce 1 tsp
Oil As Required
Bread As Required
Mayonnais 2-3 tbsp
Lettuce As Required
Tomato sliced As Required
Cheese sliced As Required

METHOD:
Marinate chicken breast with all ingredients and then grilled the chicken. Now toss bread both of side and then assembling with veges and chicken and cheese.

INGREDIENTS::
Boiled Beef 2 Cups
Sausages 3-4
Onion (Finely Cut) 1
Chili Garlic Sauce 4 tbsp
Worcestershire Sauce 4 tbsp
Oil 4 tbsp
Hot Sauce 2 tbsp
Barbeque Sauce 2 tbsp
Crushed Garlic 1 tbsp
Butter ½ Cup
Thyme, Oregano ½ tsp
Cheese Slice 6
Tomato Slice 6-8
Lettuce Leaves As Required
Sauce 1 cup
Buns As Required
Mozzarella Cheese 1-1/2 cup

INGREDIENTS FOR SAUCE:
Mayonnaise ½ cup
Hot Sauce 1 tbsp
Ketchup 2 tbsp
Lemon Juice 1 tbsp

METHOD:
First shred beef. Then heat oil and fry onion in it then add crushed garlic. Now mix beef, finely cut sausages, chili garlic sauce, Worcestershire sauce, hot sauce and barbeque sauce in it then add thyme and oregano and let it cool down. Mix all ingredients of sauce. Now put cheese slice, tomato slice, lettuce leave on bun then put beef mixture and sauce. Add mozzarella cheese again add sauce and put the other part of bun. Mix crushed garlic, thyme and oregano in melted butter and brush on bun. Now bake in pre heat oven until cheese melts

IFTAR SPECIAL RECIPE FRIED CHICKEN STICKS BY CHATKHARAY

INGREDIENTS:
Boneless chicken 400 gm (cut into cubes)
Raw papaya 1 tbsp (grinded, with skin)
Tikka boti masala 3 tbsp (heaped)
(use it of any brand)
Ginger garlic paste 1 tsp (heaped)
Black pepper powder 1/2 tsp (leveled)
chicken powder 1/3 tsp
Chat masala 1/2 tsp
salt to taste
Eggs (beaten) 2
Bread crumbs as required

METHOD:
Marinate boneless chicken cubes with tikka boti masala, raw papaya, ginger garlic paste, black pepper, salt, chicken powder chat masala and leave it for 1 hour.Then insert them on wooden skewers, coat in bread crumbs and dip in 2 beaten eggs and deep fry till light golden served with fries and ketchup.

Iftar Special Recipe DAHII BARAY KI CHAAT By Chatkharay 🤤😋

INGREDIENTS
1 cup Mash ki daal ka aata
½ cup Moong ki daal ka aata
1 tsp Salt
1 tsp Cumin seeds
1 tsp Crushed red chilies
½ tsp Baking soda
1 kg Yogurt
1 tsp Roasted and crushed cumin
1 tsp Chaat masala
½ tsp Salt
2 tbsp Sugar
1 tsp Crushed red pepper
1 ½ cup Boiled chholay
1 cup Papri crushed
2 tbsp Coriander leaves chopped

FOR CHUTNEY:
½ cup Tamarind pulp
1 tsp Chili powder
1 tsp Dried ginger
1 tsp Black salt
½ cup Sugar
1 cup Water

METHOD FOR CHUTNEY:
Cook altogether till thick.

METHOD FOR CHAAT:
Mix both the flours with water, salt, crushed red pepper, cumin seeds and soda into a thick batter. Heat for 30 mins. Shape into flat baray and deep fry. Drain and soak in water for 30 mins. Drain dahii baray keep aside. Beat yogurt with cumin seeds, chaat masala, salt, sugar, crushed red pepper. spread baray in a patter. Spread beaten curd on top covering all baras add some chholas and garnish with chutney, crushed papri and coriander leaves.

INGREDIENTS:
Mini burger buns 12

INGREDIENTS FOR BURGER PATTIES:
Chicken mince 500 gm
Chopped ginger 1 tsp
Chipped garlic 1 tsp
Onion chopped 1 cup
Spring onion chopped ½ cup
Green chilies chopped 4
Crushed red pepper 1 tsp
Chicken powder 1 tsp
Black pepper ½ tsp
Garlic powder ½ tsp
Onion powder 1 tsp
Mixed herbs 1 tsp
Corn flour 2 tbsp
Cream cheese 2 tbsp
Oil to fry the patty

INGREDIENTS FOR CHILI CHEESE SAUCE:
Butter 1 tbsp
Crushed garlic 1 tsp
Flour 1 tsp
Milk 1 ½ cup
Cheddar cheese ½ cup
Paprika 1 tsp
Crushed red pepper 1 tsp
Salt ½ tsp
Jalapenos finely minced 1 tbsp

TO ASSEMBLE:
Mayonnaise
Butter to spread on burger buns
Cheese slices
Onion slices As Required
Tomato slices As Required
Fries to serve



METHOD:
Put all the ingredients for chicken patty in a chopper and grind till smooth, shape into mini patties, size of the buns and shallow fry.

METHOD FOR CHEESE SAUCE:
Heat butter, fry garlic, add flour, add in milk, cheese with all the remaining ingredients, cook till thick, remove.

TO ASSEMBLE:
First apply little butter on both sides of the buns and toast on the pan, then apply mayonnaise on buns, put cooked patty, cover with cheese sauce, place a cheese slice over it, tomato slice, onion slice, some more cheese sauce, cover and serve immediately with loads of fries.

Iftar Special CORN CHEESE SANDWICH Recipe By Chatkharay

INGREDIENTS:
1 cup Sweet corn
1 cup Mozzarella cheese , grated
2 Green chilli very finely chopped
⅛ tspItalian seasoning
6 Bread slices
Butter as needed
salt to taste
black paper to taste

METHOD:
Pressure cook sweet corn with required salt, black paper water to just immerse, for 2 whistles. Once cooked, drain water completely. Add cheese, finely chopped chilli, Italian seasoning. Mix well. Heat the sandwich maker. I used grill attachment. Spread the prepared stuffing over a slice of bread, generously. Cover on top with another slice and smear with butter. Place this sandwich over the greased sandwich maker. Toast for a minute or until the bread turns golden. Once done, cut into triangles to serve with ketchup.

This Arbi Paratha is an arbi take on desi paratha. This paratha is stuffed with the most delicious ingredients that don’t just taste great but also after taking the first glance, you wont be able to stop yourself from having it.

INGREDIENTS FOR FILLING:
Chicken mince 1 cup
Oil 2 tbsp
Ginger & garlic paste 1 tsp
Green chili pastes 1 tbsp
Salt to taste
White pepper 1 tsp
Chicken powder 1 tsp
cumin powder 1 tsp
all spices powder ½ tsp
Spring onion chopped ¼ cup
Green chili chopped 1 tbsp
Green coriander chopped 1 tbsp
Eggs 1

INGREDIENTS FOR DOUGH:
Flour 500 grams
Salt 1 tsp
Oil 2 tbsp
Water as required
Manda Patti as required
Oil for frying

METHOD:
In a pan heat oil and sauté ginger garlic paste .then add chicken mince and roast .after this all filling spices add and well cook .then add green onion , green chili ,egg and green coriander mix and set aside .now all dough ingredients mix and knead then leave for 10 to 15 minutes .after this make balls and roll it then place panda patti then keep chicken mixture .finally fold it for 4 sides .then fry in oil and serve .

MONGOLIAN CHICKEN WITH RICE RECIPE BY CHATKHARAY
Mongolian Chicken has a divine taste to it. The flavors from chicken & rice combined with the aroma of garlic & the crunch of sweet Corn starch will make it more appetizing for you & your family.

INGREDIENTS:
Chicken fillet 1 cup
Soy sauce 2 tbsp
Black pepper 1 tsp
Corn starch 2 tbsp
Oil for frying

MONGOLIAN SAUCE:
Oil 2 tbsp
Garlic chopped 2 to 3
Dry Red chili 3 to 4
Light soy sauce 3 tbsp
Dark soy sauce 1 tbsp
Brown or white sugar 2 tbsp
Salt to taste
Black pepper ½ tsp
Red chili crushed 1 tsp
Chicken powder 1 tsp
Corn starch As Required
Spring onion julienned 6 to 8
Sesame seeds ¼ tsp

METHOD:
In mixing bowl add chicken fillet, soy sauce, black pepper and corn starch mix well. Fry chicken in hot oil for 10 minute till its turn crispy. For sauce: heat oil adds garlic fry well. INGREDIENTS:
250 gram Chicken strips
1 tsp Chili garlic sauce
1 tsp Ginger garlic paste
1 tsp Soy sauce
1 tsp Chili sauce
½ tsp Chicken powder
1 tsp Red chili powder
1 tsp Crushed red chilies
½ qty Egg
1 tsp Flour
Roll patti As Required
salt to taste

METHOD:
Marinate chicken strips with all the ingredients for 1 hour. Cut roll patti into thin strips, fold chicken strips into roll patti and deep fry and serve .

INGREDIENTS
Green chillies 2
Onion 1 medium
Tomatoes 2 medium
Mint leaves 8-10 leaves
Cooking oil 2 tbs
Red chilli powder 1 tsp
salt to taste
Turmeric powder ¼ tsp
Black pepper powder ½ tsp
Eggs 3
Mint leaves chopped ( for garnish)
Green chilli chopped ( for garnish)

METHOD:
Chop spinach leaves,green chillies, onion, tomatoes, mint leaves & set aside. In a frying pan,add cooking oil,onion and sauté until translucent. Add green chillies and mix well. Add tomatoes and mix well,cover & cook on low flame until tomatoes are soft (approx. 2-3 minutes). Add red chilli powder,salt, turmeric powder, black pepper powder and mix well. Add leaves,mint leaves,mix well and cook for a minute. Add eggs one by one,mix well and cook on low flame for 4-5 minutes. Add mint leaves & mix. Garnish with green chilli & fresh coriander & serve with paratha.

Ingredients
¼ cup cluster beans (gavarfali)
½ cup cubed potato
¼ cup cubed carrot
6 cups water
½ tsp cumin (jeera) seeds
½ tsp fenugreek (methi) seeds
¼ tsp asafoetida (hing)
4 tbsp Bengal gram flour (besan)
2 tsp chopped green chillies
1 tsp grated ginger
4-6 curry leaves
¼ tsp turmeric (haldi) powder
2 tsp red chilli powder
1-2 tbsp tamarind (imli) pulp
¼ cup ladies’ fingers (bhindi), slit vertically into 2
Unrefined salt to taste

Method:
Cook the beans, potatoes and carrots in 2 cups of water until tender. Keep aside, retaining the water. Heat a pan and add the cumin seeds and fenugreek seeds. When they crackle, add the asafoetida. Add Bengal gram flour and sauté for 4 to 5 minutes on medium heat, until golden brown. Add 4 cups of water and bring to a boil. Add the green chillies, ginger, curry leaves, turmeric powder, chilli powder, tamarind pulp, all the cooked vegetables, ladies’ finger, salt and bring to a boil. Simmer until the ladies’ fingers are cooked. Serve hot with rice.
