The second I lay eyes on those juicy red carrots I knew I had to make a Carrot Cake!
But why make a basic one when I can add caramel and candied walnuts? Oranges aren’t in season otherwise we’d be looking at a whole other elevated flavour profile but for now, it’s carrots, warm spices, cream cheese and a touch of Gotbaked madness.
