Mutton Nihari / Beef Nihari
A rich, aromatic Mutton Nihari / Beef Nihari made with bone-in meat and freshly roasted whole spices.
Ingredients:
* 2 kg bone-in mutton/beef with fat
* ¼ cup oil
* 3 tbsp ginger-garlic paste
* 5–6 green cardamom
* 5–6 cloves
* 1 tsp black peppercorns
* 2 black cardamom
* 2 star anise
* 1 mace
* ¼-inch nutmeg
* 2 dried ginger pieces
* 1½ tbsp fennel seeds
* 1 tbsp cumin seeds
* 3–4 long pepper
* 2 bay leaves
* 1 tbsp coriander seeds
* 2 cinnamon sticks
* ½ tsp ajwain
* 1 tbsp Kashmiri chilli powder
* 1 tsp turmeric
* 3 tbsp Nihari masala
* Salt to taste
* 1 litre water
* ¾ cup flour + ¼ cup water
* 1 large onion
* Extra oil as required
Method:
1. Dry roast and grind all whole spices.
2. Sauté meat in oil until it changes colour. Add ginger-garlic paste and sauté.
3. Add ground spices, Kashmiri chilli, turmeric, salt and Nihari masala. Mix well.
4. Add water and pressure cook for 10–15 minutes until tender.
5. Add the flour slurry gradually while stirring and cook until the gravy thickens.
6. Separate the fat, add extra oil and fry the onion until golden. Pour over the Nihari.
7. Garnish with coriander, green chillies, ginger and lemon. Serve with naan.
