biscott banana bread

Topping:

1/2 cup (65g) flour

5 Biscoff cookies (chopped) (about 33g)

1/4 cup (50g) brown sugar

1/4 teaspoon (1g) salt

1/4 cup (57g) butter

*Whisk together flour, chopped cookies, brown sugar, cinnamon, and salt. Pour in melted butter and mix with a fork. Set aside.

Batter:

3 medium bananas (about 340g)

1 tablespoon (15g) lemon juice

1/4 cup (57g) unsalted butter

1/2 cup (100g) sugar

1/4 cup (60g) vegetable oil

1 egg + 1 egg white

1 3/4 cups (220g) flour

1 1/2 teaspoons (6g) baking powder

1/2 teaspoon (3g) baking soda

1/2 teaspoon (3g) salt

1/2 cup (120g) buttermilk

10 Biscoff cookies (chopped) (about 66g)

*Mash bananas with lemon juice. Add butter and sugar,, mix well. Then mix in vegetable oil, egg, and egg white. In another bowl, whisk together flour, baking powder, baking soda, and salt. Add about half of the dry ingredients to the banana mixture and mix until just combined. Then add buttermilk and mix until just combined. Add the remaining flour mixture. This helps keep it fluffy and not dense, but you can always cream the wet ingredients together and then add the flour mixture. Once everything is combined, fold in the cookies. Pour into a 9x5 loaf pan and top with the topping. Bake at 350F for 60-65 minutes.

Optional: Drizzle melted cookies on top.

Brownie Cheesecake
Brownie Cake:

2 eggs

1/2 cup (42g) cocoa powder

1/2 teaspoon (3g) salt

1/2 teaspoon (2g) baking powder

1/2 teaspoon (1g) instant espresso powder

1 1/2 teaspoons (6g) vanilla

1/2 cup (113g) unsalted butter (melted)

1 cup (200g) sugar

3/4 cup (95g) flour

1 cup (170g) chocolate chips

*Beat eggs, cocoa, salt, baking powder, instant espresso, and vanilla. In a separate bowl, cream butter and sugar, then microwave gradually until sugar dissolves and becomes shiny. Mix the egg and butter mixture well, then add flour and chocolate. Pour into a baking pan (I used 9x9), but save some batter to swirl on top. Bake at 350F for 15 minutes. ps: I know the steps don't match the video, but please follow the written instructions when making this!

Cheesecake:

16 ounces (454g) cream cheese

1/2 cup (100g) sugar

1 egg

1 tablespoon (8g) cornstarch

1 teaspoon (4g) vanilla

1/4 cup (60g) heavy cream (Greek yogurt can be

substituted)

*Mix everything together until smooth. Pour over the brownie after it has baked for 15 minutes. If you saved some extra brownie batter, swirl it on top. If the brownie is still hot, place it in a preheated oven at 350, then reduce the temperature to 325 and bake for 45 minutes. Once done, turn off the oven and cool with the door closed for 20 minutes. Then, cool with the door slightly open for 30 minutes.
