Full Tandoori Chicken Recipe (Uncut) ๐Ÿ”๐Ÿ—

Ingredients:

For Cleaning & Slitting:
1 whole chicken (900gโ€“1.2kg), skin removed and cleaned
1 tbsp lemon juice
Salt (to taste)

First Marinade:
1 tbsp lemon juice
1 tsp salt
1 tsp red chilli powder
1 tsp ginger-garlic paste

Second Marinade:
ยฝ cup thick curd (hung curd preferred)
1 tbsp ginger-garlic paste
1 tbsp mustard oil (heated and cooled)
1 tsp Kashmiri red chilli powder (for color)
ยฝ tsp turmeric powder
ยฝ tsp garam masala
1 tsp cumin powder
ยฝ tsp black pepper powder
Salt to taste
1 tsp chaat masala (optional)
1 tbsp besan (roasted gram flour)
Few drops of orange-red food color (optional)

Method:

1. Prepare the Chicken:

Clean and pat dry the whole chicken.

Make deep slits on the legs, breast, and thighs to help the marinade pe*****te.

2. First Marinade:

Rub lemon juice, salt, red chilli powder, and ginger-garlic paste all over the chicken.

Let it rest for 20โ€“30 minutes.

3. Second Marinade:

In a bowl, mix all ingredients for the second marinade.

Rub this mixture generously all over and inside the chicken, pushing into the slits.

Cover and marinate in the refrigerator for at least 6 hours or overnight for best flavor.

4. Cooking: Option 1: Oven

Preheat oven to 200ยฐC (392ยฐF).

Place the chicken on a wire rack or tray, baste with oil or butter.

Roast for 35โ€“45 minutes, turning and basting halfway until fully cooked and charred.

Option 2: Tandoor / Grill

Cook in a traditional tandoor or charcoal grill, turning and basting until fully cooked and smoky.

Option 3: Pan

Sear on high heat to get color, then cover and cook on low heat until fully cooked, or finish in oven.

5. Serving:

Rest for 5โ€“10 minutes before cutting.

Serve with onion rings, lemon wedges, and green chutney.

Ingredients :
500g Chicken
1/4 Cup Curd
1/2tsp Salt
1/2tsp Chicken Powder (Optional)
1tbsp Ginger Garlic Paste
1tbsp Schezwan Sauce
1tbsp Red Chilli Sauce
1tsp K. Red Chilli Powder
1/2tsp Degi Mirch Powder
1tsp Coriander Powder
1/2tsp Cumin Powder
1/2tsp White Pepper Powder
1/4tsp Chaat Masala
1/2tsp Garam Masala
1/4tsp Orange Red Food Color
Juice of Half Lemon
1tbsp Mustard Oil
1tbsp Fresh Cream
1tbsp Butter to fry Chicken
2tbsp Fresh Cream for Garnish
1tbsp Melted Butter for Garnish
Chopped Coriander Leaves
Method :
1. In a bowl, mix curd, salt, chicken powder, ginger garlic paste, schezwan sauce, red chilli sauce, red chilli powder, degi mirch, coriander powder, cumin powder, white pepper powder, chaat masala, garam masala, orange red food color, juice of half lemon, mustard oil and fresh cream.
2. Add the prepared marinade to the chicken and mix well. Marinate for 2 hours.
3. Heat butter in a pan.
4. Add chiken pcs and cook on high heat for 5 mins.
5. Cover and cook on low flame for 15 mins.
6. Remove excess gravy and cook till chicken is dry.
7. Char on gas flame till black spots are visible on chicken pieces.
8. Garnish with fresh cream, melted butter and coriander leaves.
