To make Black Pepper Chicken Karahi, take 1 cup of mustard oil and heat it until it burns slightly (to remove the raw smell).
When it’s ready, add 15 crushed garlic cloves. Once the garlic aroma fades, add 5 large chopped tomatoes.
When the tomatoes become soft, add salt to taste and 1½ teaspoons of coriander powder. Then add 1 star anise, 2 pieces of cinnamon stick, the shell of 1 large cardamom, and the crushed seeds of that cardamom.
Since we’re making chicken, add the chicken gizzards first (as they take longer to cook). When the masala is ready, add 1½ kilograms of chicken and fry it until the color changes.
Once the color changes, add juice of 4 lemons and 1 small bowl of yogurt, then sauté (bhoon) well. Cover and cook for 10 minutes.
After 10 minutes, the chicken will be tender. You can keep the gravy as thick or thin as you prefer.
When oil separates (tari appears), garnish with green chilies and fresh coriander, and enjoy your Black Pepper Chicken Karahi!
