Baingan Aloo Recipe 🍆🥔

A simple, flavorful, and comforting Baingan Aloo recipe made with soft eggplant, potatoes, tomatoes, and desi spices.

Ingredients

* ½ cup oil
* 2 onions, sliced
* 1 tsp cumin seeds
* 1 tsp mustard seeds
* 4 potatoes, sliced
* 2 tomatoes, chopped
* 1 kg baingan / eggplant, sliced
* ½ cup water
* ½ cup water, again

Spices

* 1 tsp red chilli powder
* 1 tsp crushed chillies
* ½ tbsp coriander powder
* Salt to taste
* ½ tsp turmeric powder

Garnish

* Fresh coriander leaves
* Green chillies

Method

1. In a pan, heat ½ cup oil and add 2 sliced onions. Cook until translucent.
2. Add cumin seeds and mustard seeds, then mix well.
3. Add sliced potatoes and mix properly.
4. Now add chopped tomatoes.
5. Add red chilli powder, crushed chillies, coriander powder, salt, and turmeric powder. Mix well.
6. Add ½ cup water and cook for 3–4 minutes on low flame.
7. Add 1 kg sliced baingan and mix well.
8. Add another ½ cup water.
9. Pressure cook for 5 minutes on medium flame.
10. Sprinkle fresh coriander leaves and green chillies on top.

Ready to serve with roti or paratha. 🍆🥔

Spicy Chicken Karahi Recipe 🌶️🍗

A creamy, buttery, and spicy restaurant-style Chicken Karahi — rich in flavor, full of aroma, and perfect for dinner or daawat nights.

Ingredients

* ⅓ cup oil
* 50g butter
* 2 medium onions, chopped
* 1 kg chicken
* 1 tbsp ginger garlic paste
* 4 tomatoes
* ½ cup yogurt
* 100 ml cream

Spices

* 1 tsp black pepper
* 1 tsp cumin powder
* ½ tsp crushed chillies
* Salt to taste
* ½ tbsp coriander powder

Roasted Masala

* 1 tsp cumin seeds
* 1 tsp coriander seeds
* 1 tsp black peppercorns
* 3 whole dried red chillies

Garnish

* Butter
* Green chillies
* Lemon slices
* Ginger
* Ground roasted masala



Method

1. In a pan, heat ⅓ cup oil and add 50g butter.
2. Add 2 medium chopped onions and sauté until translucent.
3. Add 1 kg chicken and mix well. Cook for 5 minutes on low flame.
4. Add 1 tbsp ginger garlic paste and mix well.
5. Add 4 tomatoes, cover with a lid, and cook until soft. Remove the tomato skins and mash the tomatoes.
6. Add black pepper, cumin powder, crushed chillies, salt, and coriander powder. Mix well.
7. Add ½ cup yogurt and cook until everything is well combined.
8. In a separate pan, dry roast cumin seeds, coriander seeds, black peppercorns, and whole dried red chillies. Grind them and sprinkle over the karahi.
9. Mix well, cover, and cook for 3 minutes.
10. Add 100 ml cream and mix well.
11. Garnish with butter, green chillies, lemon slices, ginger, and the remaining ground roasted masala.

Ready to serve! 🍽️

Lobiya Recipe

For ½ kg lobiya, soak overnight. Boil in a pressure cooker with 1 tsp salt for 1 hour.

Now in another pan, take ½ cup oil and add 2 chopped onions. Fry until golden brown.

Then add 1 tbsp garlic paste and cook for a minute. Now add 2 blended tomatoes.

Spices:

* 1 tsp red chilli powder
* 1 tsp crushed chillies
* ½ tsp turmeric powder
* Salt to taste
* 1 tbsp coriander powder

Cook for 2 minutes. Now add ½ cup yogurt and ⅓ cup tamarind pulp. Cook for 3 minutes.

Now separate the oil in a bowl.

Then add the boiled lobiya to the mixture. Mash some lobiya with a spoon for a thick consistency. Now add 3 cups lobiya water, cover the lid, and cook for 15 minutes on low flame until you get the desired consistency.

Now add the remaining oil, fresh coriander, and green chillies.

Ready to serve.

Qeema Bhindi Recipe

Ingredients

For Qeema:

* ⅓ cup oil
* 1 onion, chopped
* 1 tsp cumin seeds
* 1 tbsp ginger-garlic paste
* 750 g mince
* 3 tomatoes, blended
* 1 tsp red chilli powder
* 1 tsp crushed chillies
* Salt to taste
* 1 tbsp coriander powder
* ½ tsp turmeric powder
* ½ cup water

For Bhindi:

* 750 g bhindi, washed, dried, and cut
* 3 tbsp oil

For Fried Onions:

* ⅓ cup oil
* 4 onions, sliced

For Garnish:

* Fresh coriander leaves
* Green chillies
* Lemon slices
* Black pepper, to sprinkle



Method

1. Heat ⅓ cup oil in a pan. Add chopped onion and cumin seeds, then sauté until the onion becomes light golden.
2. Add ginger-garlic paste and cook for a few seconds.
3. Add mince and cook for 5 minutes until it changes colour.
4. Add blended tomatoes, red chilli powder, crushed chillies, salt, coriander powder, and turmeric powder. Mix well.
5. Add ½ cup water, cover the lid, and cook on low flame for 15 minutes, or until the mince is cooked and the masala becomes dry.
6. In a separate pan, heat 3 tbsp oil. Add bhindi and fry well until it becomes slightly golden and cooked.
7. Add the fried bhindi to the cooked qeema mixture and mix gently.
8. In the same pan, heat ⅓ cup oil. Add sliced onions and sauté on high flame for 5 minutes until light golden.
9. Add the fried onions to the qeema bhindi mixture.
10. Garnish with fresh coriander leaves, green chillies, lemon slices, and a sprinkle of black pepper.
11. Mix gently, cover the lid, and cook on low flame for 5 minutes.

Qeema Bhindi is ready to serve.

Tori Ki Bhujia | Ridge Gourd Stir Fry

A light, simple, and easy-on-stomach vegetable recipe made with fresh tori, onions, tomatoes, green chillies, and basic spices. Perfect for everyday lunch or dinner with roti or rice.

Ingredients:
½ cup oil, 1 tsp cumin seeds, 4 whole dried red chillies, 5 chopped onions, 1 kg chopped tori, 4 chopped tomatoes, 3–4 green chillies, red chilli powder, crushed chilli, coriander powder, and salt.

Method:
Heat oil, add cumin seeds and whole red chillies. Add onions and cook until light golden. Add tori, tomatoes, green chillies, and spices. Mix well, cover, and cook on low flame until tori becomes tender and oil separates. Garnish with fresh coriander, green chillies, and lemon juice.

Ready to serve with roti or rice.

Panjmail Daal Recipe | After Eid Comfort Food

After a heavy meaty Eid ul Azha, nothing feels better than a warm bowl of Panjmail Daal Chawal. This simple, flavorful, and comforting daal is the perfect break from all the BBQ, karahi, and meat dishes.

Ingredients

Lentils:

* ½ cup moong daal
* ½ cup masoor daal
* ½ cup moong chilka daal
* ½ cup chana daal
* ½ cup mash daal

For Cooking:

* 5 cups water
* 1 tsp red chilli powder
* 1 tsp crushed red chillies
* Salt to taste
* 1 tsp turmeric powder
* 1 chicken cube, optional
* 1 onion, chopped
* 1 tomato, chopped

For Finishing:

* Garam masala, as needed
* 1 tsp kasuri methi
* Fresh coriander leaves

For Tarka:

* Oil or ghee
* Sliced onion
* Garlic cloves, sliced
* Green chillies
* Red chillies
* Cumin seeds

Method

1. Wash all the lentils well and soak them in water for 1 hour.
2. Add the soaked daals to a pressure cooker with 5 cups of water.
3. Add red chilli powder, crushed red chillies, salt, turmeric powder, chicken cube, chopped onion, and chopped tomato.
4. Pressure cook on medium flame for 15 minutes, or until the lentils are soft and fully cooked.
5. Open the pressure cooker carefully. If the daal is too thin, cook it on high flame for a few minutes until it reaches your desired consistency.
6. Sprinkle garam masala, then add kasuri methi and fresh coriander leaves.
7. For the tarka, heat oil or ghee in a pan. Add cumin seeds, sliced onions, garlic, green chillies, and red chillies. Fry until golden and aromatic.
8. Pour the hot tarka over the daal and serve immediately.

Serving Suggestion

Serve this delicious Panjmail Daal with white rice, green salad, achar, and fresh lemon.
