🇵🇷 Arroz con Gandules (Serves 8–10)

Ingredients

* 2 cups long-grain white rice
* 1 (15 oz) can gandules (pigeon peas), drained (reserve ½ cup of the liquid if desired)
* ¼ cup olive oil or achiote oil
* ½ cup sofrito
* 2 cloves garlic, minced
* ½ cup diced ham or salt pork (optional, but traditional)
* ¼ cup tomato sauce
* 1 packet Sazón with achiote
* 1 teaspoon adobo seasoning
* 1 teaspoon dried oregano
* ½ teaspoon ground cumin
* 1 bay leaf
* 3 cups chicken broth
* ¼ cup chopped cilantro (optional)

Instructions

1. Build the flavor
* Heat the oil over medium heat in a heavy pot (caldero if you have one).
* Cook the ham until lightly browned.
* Add sofrito and garlic. Sauté for 3–4 minutes.
2. Season
* Stir in tomato sauce, Sazón, adobo, oregano, cumin, and bay leaf.
* Cook another 2–3 minutes until fragrant.
3. Add the gandules
* Stir in the pigeon peas and let them cook for about 2 minutes to absorb the flavors.
4. Add liquid
* Pour in the chicken broth (and reserved gandule liquid if using).
* Bring to a rolling boil.
5. Cook the rice
* Stir in the rice only once.
* Taste the broth and adjust salt if needed.
* Once it returns to a boil, reduce the heat to low.
6. Steam
* Cover tightly.
* Cook for 25–30 minutes without lifting the lid.
7. Finish
* Fluff gently with a fork.
* Cover again and let it rest for 10 minutes before serving.

🔥 Abuela’s Secret Tips

* Use a caldero for the best texture.
* A little achiote oil gives the rice that authentic golden-orange color.
* Don’t stir the rice once it starts simmering.
* Want the prized pegao (crispy rice on the bottom)? Leave the rice in the pot over very low heat for an extra 5–8 minutes after it’s done.
* For holidays, add a few stuffed Spanish olives, a tablespoon of capers, or a splash of pimento liquid for even deeper Puerto Rican flavor.

Prep Time: 20 minutes
Cook Time: 2½–3 hours

Ingredients

For the Broth

* 3 lbs beef shank (with bone) or beef short ribs
* 12 cups water
* 1 large white onion, quartered
* 6 cloves garlic, peeled
* 2 bay leaves
* 1 tbsp kosher salt
* 1 tsp black pepper
* 1 tsp Mexican oregano

Vegetables

* 3 carrots, cut into large chunks
* 3 potatoes, quartered
* 2 ears corn, cut into thirds
* 1 chayote squash, peeled and cubed
* 1 zucchini, cut into thick chunks
* ½ small green cabbage, cut into wedges
* 10–12 green beans, trimmed

For Serving

* Fresh cilantro, chopped
* Lime wedges
* Warm corn tortillas or flour tortillas
* Mexican rice (optional)
* Salsa or chile de árbol salsa
* Diced onion (optional)



Instructions

1. Build the Broth

Place the beef, onion, garlic, bay leaves, oregano, salt, pepper, and water into a large stockpot.

Bring to a boil over medium-high heat.

Skim off any foam that rises to the surface.

Reduce heat to low, cover, and simmer for 1½–2 hours, until the meat is fall-apart tender.



2. Add the Vegetables

Add:

* Carrots
* Potatoes
* Corn
* Chayote

Simmer 20 minutes.



3. Finish the Soup

Add:

* Zucchini
* Green beans
* Cabbage

Continue cooking another 15–20 minutes, just until the vegetables are perfectly tender.

Taste the broth and adjust salt if needed.



4. Serve

Place a generous piece of beef, corn, potatoes, and vegetables into each bowl.

Ladle the hot broth over everything.

Top with fresh cilantro.

Serve with plenty of lime wedges, warm tortillas, and your favorite salsa.

❤️ The broth is the star—don’t rush it. Slow simmering creates incredible flavor.

❤️ Leave the bones in. Bone marrow gives the soup its rich, silky texture.

🌮 Authentic Mexican Beef Barbacoa

Cook Time: 6–8 hours (slow cooker) or 3½–4 hours (Dutch oven)

🥩 Ingredients

Beef

* 3–4 lbs beef chuck roast (or beef cheeks for authentic barbacoa)
* 2 bay leaves

Chile Sauce

* 2 dried guajillo chiles
* 2 dried ancho chiles
* 1 chipotle pepper in adobo (optional, for heat)
* 1 medium white onion, quartered
* 4 cloves garlic
* 1 tsp dried oregano (Mexican oregano if available)
* ½ tsp ground cumin
* ½ tsp ground cloves
* ½ tsp black pepper
* 1 tsp kosher salt
* ½ cup beef broth
* ½ cup apple cider vinegar
* Juice of 1 lime

🌶️ Directions

1. Toast the Chiles

Toast guajillo and ancho chiles in a dry skillet for about 1 minute per side until fragrant.

Place them in hot water and soak for 15 minutes.

2. Make the Sauce

Blend together:

* softened chiles
* onion
* garlic
* chipotle
* oregano
* cumin
* cloves
* pepper
* salt
* beef broth
* vinegar
* lime juice

Blend until completely smooth.

3. Prepare the Beef

Cut beef into large chunks if needed.

Pour the sauce over the meat and coat well.

For the best flavor, marinate overnight (or at least 4 hours if you have time).

4. Slow Cook

Place beef, sauce, and bay leaves into the slow cooker.

Cook:

* LOW: 8 hours
* HIGH: 5–6 hours

The beef should fall apart with a fork.

5. Shred

Remove bay leaves.

Shred the beef with two forks.

Mix the shredded beef back into the cooking juices.

6. Optional Crispy Finish (Highly Recommended 🔥)

Spread the shredded beef on a baking sheet.

Broil 5–7 minutes until the edges get crispy.

Mix back with a little of the juices.

🌮 Serve With

* Warm corn tortillas
* Fresh cilantro
* Diced white onion
* Lime wedges
* Salsa verde or salsa roja
* Pickled red onions
* Cotija cheese (optional)

🥣 Optional Consomé

Skim the fat from the cooking liquid and serve it on the side for dipping tacos.

💡 Pro Tips

* Beef cheeks make the most authentic barbacoa.
* Chuck roast is the best value and shreds beautifully.

The Ultimate Puerto Rican Sunday Dinner

🍖 Pernil Ingredients

* 8-10 lb pork shoulder (bone-in)
* 12 garlic cloves
* 2 tbsp oregano
* 2 tbsp adobo seasoning
* 2 tsp black pepper
* 2 tsp cumin
* 2 tbsp kosher salt
* 2 tbsp olive oil
* 2 tbsp white vinegar
* Juice of 2 limes
* 1 packet Sazón with achiote

🔥 Pernil Instructions

1. Score the skin with a sharp knife.
2. Blend garlic, oregano, adobo, pepper, cumin, salt, olive oil, vinegar, lime juice, and Sazón into a paste.
3. Rub the marinade under the skin and deep into the meat.
4. Marinate overnight (24 hours is even better).
5. Roast at 300°F for 5½-6 hours covered.
6. Remove the foil and raise the oven to 450°F for 20-30 minutes until the skin becomes crispy (the prized cuero).



🟢 Crispy Tostones

Ingredients

* 3 green plantains
* Vegetable oil
* Salt
* Garlic water (2 crushed garlic cloves mixed with ½ cup water)

Instructions

1. Peel and slice plantains into 1-inch pieces.
2. Fry at 325°F for 4-5 minutes.
3. Smash each piece with a tostonera or the bottom of a glass.
4. Dip briefly into garlic water.
5. Fry again at 375°F until golden and crispy.
6. Sprinkle with sea salt immediately.



🫘 Puerto Rican Habichuelas Guisadas

Ingredients

* 2 cans pink beans (or small red beans)
* ½ onion, diced
* ½ green pepper, diced
* 3 garlic cloves, minced
* 2 tbsp sofrito
* ½ cup tomato sauce
* 1 tsp oregano
* 1 packet Sazón
* 1 tsp adobo
* 1 cup chicken broth
* 2 tbsp chopped cilantro
* Optional: diced potatoes, calabaza squash, or Spanish olives

Instructions

1. Sauté onions, peppers, garlic, and sofrito.
2. Add tomato sauce and seasonings.
3. Stir in beans and broth.
4. Simmer 25-30 minutes until thick and flavorful.
5. Finish with fresh cilantro.



🍚 Serve With

* White Puerto Rican rice
* Fresh avocado slices
* Garlic mojo over the pork
* Hot sauce (optional)



🌴 Abuela’s Secret Tips

✅ Marinate the pork at least overnight.
✅ Let the pernil rest 20 minutes before shredding.
✅ Double-fry the tostones—they stay much crispier.
