2 coffees from Ethiopia ☕️

Two coffees from Ecuador, connected by the same family story but very different from each other.

The first comes from Jose Ignacio Jijon, where developed the Wave process by taking the coffee through different temperatures during fermentation, creating a cup that is incredibly clean and expressive, with notes of tangerine, hibiscus tea and molasses sweetness. It’s floral, bright and syrupy, with beautiful clarity.

A little further into the Jijón story, we find Pepe & Co. , where Jose Jijón is building his own path as a producer. His Typica Mejorada, processed as a classic washed coffee, offers a completely different experience: delicate florals and bright acidity, with notes of lemon balm, peach, Rocha pear and honeycomb. Light, elegant and wonderfully tea-like.

Both are available for filter at SO Coffee Roasters, and you can also find them on our website. 🇪🇨☕

Ever wondered how we roast our coffee? ☕️

Today, we’re roasting a Brazil — Anahí from Cerrado Mineiro, grown at an altitude of 1,600 metres.

We use exactly 5 kg of coffee for each batch.

For the Anahí, the roasting profile takes approximately 10 minutes and 30 seconds.

We use the Cropster system to monitor each indicator tracked by our roaster throughout every batch with greater precision.

Once roasted, the coffee leaves the drum and cools for 3 minutes in the cooling tray.

After cooling, the coffee is transferred into buckets.

We weigh the coffee again to make sure we have measured the weight loss accurately. It is then left to rest, without the bucket lids, for two days.

After resting, the coffee goes through a quality control check and is ready to be packed into our bags

Ever wondered how we roast our coffee? ☕️

Today, we’re taking you behind the scenes of our roasting process with a Brazil Anahi from Cerrado Mineiro, grown at 1,150 masl.

We start with around 5 kg of green coffee, weighing it before it goes into the roaster.

🔬 While the main batch is roasting, we roast a sample in our small automatic sample roaster.

🔥 The roasting process takes around 45 minutes to 1 hour, while we use Cropster to monitor temperature and other key indicators throughout the roast.

❄️ Once the coffee leaves the drum, it spends around 10 minutes in the cooler, where it is rapidly cooled and defective beans can be removed.

⚖️ After cooling, we weigh the coffee again. There’s usually a loss of around 190 g during the roasting process. The beans are then left in open boxes to release gases.

For the next two days, we carry out quality controls to make sure everything is just right.
And finally… it’s ready to be packed and make its way to your cup. 🤎

Before enjoying this cup of coffee, it has gone through a meticulous process, from harvesting, washing, drying, and sorting to roasting, quality control, and extraction.
