Looking for a weight-loss alternative this Sankranti 🌾🌞

Try this Gluten-free Pongal made using healthy foxtail millet instead of conventional rice .

Instructions :

Wash and Soak 1 cup foxtail millet and 1 cup yellow moong for an hour .
Transfer the soaked millet and lentil into a cooking pot / rice cooker / insta pot . ( I made this Pongal in a electric rice cooker )
Add 6 cups water .
Add Salt ( 2 tsps ) + 1/2 tsp turmeric powder
Give a good mix .
Set to cook mode .
Pour in the tadka to the softly cooked lentil millet .
Mix . Serve hot with chutney / Sambar .
Tadka :
Desi Ghee 2 tbsps
Finely chopped ginger 1 tbsp
Crushed cumin + black pepper 1 + 3/4 tbsp
Hing 1/2 tsp
Fresh curry leaves 2 sprigs
Cashew nuts 12 fry till golden .

Christmas special πŸŽ„ No Maida , No refined sugar treat .
Strawberry πŸ“French Toast Casserole is a delicious easy breakfast . Sweetened crusty Top and moist custardy middle gives you a lot of richness in every bite .

To keep this dessert healthy , I have used multigrain multi-seeded bread .

Ingredients :

Large eggs 2
Multigrain bread ( multiseeded ) 4 slices
Whole milk 1 cup
Ground cinnamon 1 tsp
Jaggery powder 2 tsp
Honey as preferred
Fresh strawberries chopped

Cut bread slices into bite sized squares . Arrange them on a bakeware .
Whisk milk , eggs , sweetener and cinnamon. Pour the whisked egg milk over the bread pieces .
Top it up with chopped strawberries . Spread strawberries throughout .
Bake in a preheated airfryer for 15 mins @ 180 C until crusty top , moist (but not soggy ) middle achieved .

Cut and serve warm with honey 🍯

Onion Laccha Paratha is a multilayered Indian flatbread which is crispy flaky on the outside and soft inside . This delicious spicy paratha is perfect for a hearty breakfast on a cozy winter morning .

Ingredients :

For filling

Onions 3 sliced
Salt 1 tsp
Gram flour 1+ 1/4 tbsp
Red chilli powder 2 tsp
Cumin powder 1 tsp
Chaat powder 3/4 tsp
Ajwain a tsp crushed
Green chilli 2 finely chopped
Cilantros few

Wheat flour roti dough
Kalonji seeds as preferred
Cilantros few
Ghee for cooking parathas .

Broad Beans Stir Fry / Avarakkai Poriyal

A Simple South Indian style Poriyal that goes well with Sambar rice , rasam rice or plain rotis .

This Broad beans is loaded with nutrients hence highly recommended for children and adults for overall development and immunity . Avarakkai is one of the must have vegetables during pregnancy to induce iron , protein , folate , fiber and helps in postpartum for speedy healing . Induces breast milk supply thereby supporting lactating mothers .

Ingredients :

Broad beans 500 g cleaned , chopped
Shallots chopped 1 cup
Mustard seeds 3/4 tsp
Coconut oil 1 tbsp
Crushed garlic 1 tbsp
Crushed ginger 1/2 tbsp
Crushed green chilli 1 tsp
Dry red chilli 3-4
Curry leaves 2 sprigs
Salt 1 tsp
Shredded coconut πŸ₯₯ 2 tbsps
