Pineapple Chicken Recipe
🧾 Ingredients
500 g chicken breast (bite-size pieces)
1 cup pineapple chunks (fresh or canned)
½ cup pineapple juice
1 onion (cubed)
1 bell pepper (cubed)
3 cloves garlic (minced)
2 tbsp soy sauce
1 tbsp ketchup
1 tbsp honey or brown sugar
1 tsp vinegar
1 tsp cornstarch (mixed with 2 tbsp water)
2 tbsp oil
Salt & black pepper to taste
Optional: chili flakes or black pepper for heat
👩🍳 Instructions
Heat oil in a pan or wok over medium heat.
Add chicken, season with salt and pepper, and cook until lightly golden. Remove and set aside.
In the same pan, sauté garlic and onion until fragrant.
Add bell pepper and pineapple chunks; stir-fry for 2 minutes.
Mix pineapple juice, soy sauce, ketchup, honey, and vinegar. Pour into the pan.
Add cooked chicken back and simmer for 3–4 minutes.
Stir in cornstarch slurry to thicken the sauce.
Cook until glossy and well coated. Adjust seasoning.
Serve hot with steamed rice or noodles.

Garnish with sesame seeds or spring onions for extra flavor and presentation.
