Pineapple Chicken Recipe

🧾 Ingredients

500 g chicken breast (bite-size pieces)
1 cup pineapple chunks (fresh or canned)
½ cup pineapple juice
1 onion (cubed)
1 bell pepper (cubed)
3 cloves garlic (minced)
2 tbsp soy sauce
1 tbsp ketchup
1 tbsp honey or brown sugar
1 tsp vinegar
1 tsp cornstarch (mixed with 2 tbsp water)
2 tbsp oil
Salt & black pepper to taste

Optional: chili flakes or black pepper for heat

👩‍🍳 Instructions

Heat oil in a pan or wok over medium heat.
Add chicken, season with salt and pepper, and cook until lightly golden. Remove and set aside.

In the same pan, sauté garlic and onion until fragrant.

Add bell pepper and pineapple chunks; stir-fry for 2 minutes.

Mix pineapple juice, soy sauce, ketchup, honey, and vinegar. Pour into the pan.
Add cooked chicken back and simmer for 3–4 minutes.

Stir in cornstarch slurry to thicken the sauce.
Cook until glossy and well coated. Adjust seasoning.

Serve hot with steamed rice or noodles.

Garnish with sesame seeds or spring onions for extra flavor and presentation.

🧄🧈 Garlic Butter Beef Cheese Burger Rollups

📝 Ingredients:

For the beef filling
500 g minced beef
1 small onion (finely chopped)
2 cloves garlic (minced)
1 tsp salt
½ tsp black pepper
½ tsp paprika or chili powder (optional)
1 tbsp oil

For the rollups
6–8 tortilla wraps / spring roll sheets / paratha (your choice)
1–1½ cups mozzarella or cheddar cheese (grated)
Garlic butter
3 tbsp butter (melted)
2 cloves garlic (finely chopped)
1 tbsp fresh parsley or coriander (optional)

👩‍🍳 Instructions

Prepare the beef
Heat oil in a pan.
Add chopped onion and sauté until soft.
Add garlic and cook for 30 seconds.
Add minced beef, salt, pepper, and paprika.
Cook until beef is fully cooked and dry. Let it cool slightly.

Assemble rollups
Lay a tortilla or sheet flat.
Add cooked beef in a line.
Sprinkle generously with cheese.
Roll tightly like a spring roll or wrap.
Make garlic butter
Mix melted butter with garlic and parsley.

Cook the rollups
Heat a pan on medium heat.
Brush rollups with garlic butter.
Cook until golden and crispy on all sides OR
Bake at 180°C (350°F) for 12–15 minutes until crispy.

Final touch
Brush more garlic butter on top after cooking.

Serve hot with ketchup, mayo, garlic sauce, or burger sauce
