Golden, creamy, and full of warmth 🧡
Homemade Pumpkin Soup spiced with a hint of cumin.

🔸2 tbsp olive oil or butter
🔸1 medium onion chopped
🔸4 garlic cloves chopped
🔸1 tsp ground cumin
🔸½ tsp ground coriander (optional)
🔸500g pumpkin, peeled and diced
🔸1 medium carrot cut into small cubes
🔸3 cups vegetable or chicken stock
🔸½ cup coconut milk or cream
🔸Salt and pepper to taste
🔸Fresh coriander or pumpkin seeds for garnish

▪️Heat olive oil or butter in a pot over medium heat.
▪️Add onion and garlic, sauté until soft and fragrant.
▪️Add cumin and coriander powder and cook for 30 seconds to release the aroma.
▪️Add pumpkin and carrot, mix well with the spices.
▪️Pour in the stock, bring to a boil, then simmer for about 20 minutes, until the pumpkin and carrot are tender.
▪️Blend the soup using a hand blender or in batches until smooth.
▪️Return to the pot, stir in coconut milk or cream, and season with salt and pepper.
▪️Heat gently for a few more minutes.
▪️Serve warm, garnished with a drizzle of cream, chopped coriander, or roasted pumpkin seeds.
