Kombucha and water kefir often get lumped together.

They’re not the same.

Water Kefir = The Probiotic Powerhouse: It typically contains a higher density and variety of live bacterial strains. It’s less about breaking down a heavy meal and more about “re-populating” your gut microbiome with good bugs.

Kombucha = The Digestive Aid: It is rich in organic acids (like acetic and gluconic acid) and enzymes. These help break down food, support liver detox, and “wake up” your metabolism.

Over the past few weeks, availability was reduced as we prepared batches in advance for a short planned trip.

What happens to our water kefir grains when we’re not actively brewing?

They go into what we call a kefir hotel.

This means the grains are kept submerged in sugar water and refrigerated to slow fermentation while keeping the cultures viable.

It allows the grains to rest, without stressing or starving them.

When brewing resumes, they’re gradually reactivated, not rushed.

Live cultures respond best to patience 💛
